What can be used to make vodka liqueur. Recipes for delicious alcoholic tinctures

Today, home brewing is for many not just a source of high-quality and inexpensive alcohol, but also a hobby, an outlet. Favorite business, doing which you can forget about problems and difficult life situations. Many of those who brew this drink do not drink "clean", preferring to create liqueurs and liqueurs. I belong to these people too, making tinctures has been my hobby for more than 6 years. We collect a wide variety of recipes that can be prepared at home with the whole family: we write down, try, experiment. The most best drinks of those that we met, we saw the light on this blog, because it is not a matter of hiding them on the shelf, let every lover of home brewing at home enjoy excellent drinks, the recipes of which you will find in this article.

As an introduction, it is worth saying the following: making such drinks at home is not a quick matter, you often have to wait up to six months, and sometimes it can take longer. In my cellar there are containers marked 2010 and earlier, sometimes it's even a pity to open them, because every year the drink only gets better, tastier, richer. All this is said to the fact that you should not chase a quick result, quality products- the fruits of the months of infusion. However, for lovers of quick tinctures - in this article we will consider such options, perhaps someone will like them even more than those that have been infused over the years, this is a matter of taste and personal preference.

Features of infusions on moonshine

Fortress

On the basis of moonshine, two types of tinctures are made: liqueurs and the tinctures themselves. Unlike liqueurs, the latter are not as sweet and much stronger. The amount of alcohol in them is from 45% and more, therefore, on strong home-made alcohol, tinctures are obtained better than on vodka, the alcohol content of which is less.

The basic rule for the preparation of tinctures is the high quality of moonshine. It must be well filtered and preferably double distilled so that unpleasant impurities and odors do not spoil the taste of the finished product.

As a good option: We select the raw materials for the mash, which would be in harmony with the infused. Received moonshine of the first distillation, distilled through a rectification column.

Sugar level

According to the amount of sugar, tinctures of three types are distinguished.

  1. Bitter. They are cooked with herbs or spices, for example, for St. John's wort, galangal, oregano, ginger, and so on. The sugar level in these drinks does not exceed 2% and only if it is contained in the products used.
  2. Semi-sweet (conventionally sweet). These are infusions of berries, often with the addition of herbs. The amount of sugar in them is related to how sweet the berries are used. But usually its level does not exceed 5-6%.
  3. Sweet. This type includes a variety of tinctures to which sugar is added. In them, its level is 18-20%

Too sweet, like liqueurs, these drinks are usually not made. Although much here depends on taste, the overly sugary strong alcohol is heavy and insidious.

General principles of making berry infusions

Tincture on moonshine at home will be of high quality if the original product is not only well-refined, but also strong.

  • For a herbal drink, its strength should be 50%. If the strength exceeds 60%, then it is recommended to add water.
  • If berries are used, the alcohol content should be higher, preferably 70%. Because the berries will definitely give juice, which will dilute the finished product and lower its strength.
  • It is better to prepare berry tincture from frozen berries, as they release more juice containing substances necessary for better taste.
  • To get a drink with a pleasant, slightly caramel flavor, it is recommended to bake some berries, such as cherries, in the oven.
  • You need to insist moonshine in a warm and preferably dark place. In the light, its taste will change, and in warmth it will be ready for use faster.
  • The cooking time should be long, at least 2 months, and preferably 3-4.
  • In the process of infusion, you should not open the lid, taste, etc. As this can lead to oxidation of the moonshine, and the taste will deteriorate.

Therefore, in order to prepare a tasty and high-quality drink, you need not only accuracy, but also patience.

Tincture recipes

"Klyukovka"

Homemade cranberry liqueur made with moonshine is one of the most famous. And not only because this berry is very well suited for the preparation of alcohol-containing drinks, but also because it contains a lot of vitamins, and the infusion turns out to be not only tasty, but also healthy.

  • When the cranberries are infused, drain the mixture through a colander and strain through cheesecloth.

Blackcurrant tincture

A fragrant blackcurrant infusion is prepared faster than a cranberry one, but it must also be kept for at least half a month. Moreover, it is worth remembering that the longer it is infused, the better and brighter the taste will be.

  2. Add sugar and shake well to mix with black currant.
  3. Pour moonshine into a container with berries and remove it.

One of these "early ripening" infusions is lemon. It can be done if guests are expected to arrive, but there is no ready-made wine.

Products:

  • a liter of moonshine, with a strength of at least 60%;
  • ½ lemon;
  • 70 grams of sugar
  • 4 cloves;

This drink should be prepared in a saucepan with a tight-fitting lid so that the light and volatile alcohol does not evaporate and the strength of the final product does not decrease.

Cooking process:

  1. Cut the lemon into half rings along with the zest.
  2. Put in a saucepan, add sugar, cloves and moonshine.
  3. Then the mixture must be heated, but not to a boil, so that the alcohol does not begin to evaporate. The fire should be turned off when the first bubbles are just beginning to rise from the bottom of the dish.
  4. Close with a tight lid and leave to infuse.
  5. After 12 hours, filter and, pouring into bottles, refrigerate for another couple of hours.

Cranberry tincture can be made in the same way.

Making tinctures on moonshine is a fascinating and creative process. During which, you can enjoy not only the use and creativity, but also from the enthusiastic reviews of the guests.

Attention, only TODAY!

Tinctures are alcoholic beverages prepared by cold infusion of various spices and spices. In the process of infusion, the alcohol solution is saturated with aromatic substances, and the taste of the drink changes.

Tinctures are made both in production and at home.

Since the plant substances in the process of infusion pass into tinctures, this determines not only their pleasant taste, but also their properties. In particular, tinctures in small doses strengthen the immune system, improve metabolic processes.

How vodka tincture is made

It is believed that tinctures appeared in Russia in the 60s of the 18th century, at the same time when the base of tinctures - vodka - began to gain widespread acceptance.

Tinctures without adding water were called erofeich at that time. According to one version, this is due to the fact that in 1763 Alexei, one of the Orlov brothers, suddenly fell ill. By order of the empress, the best doctors were brought to him, but they could not help the count in any way. And then the barber Erofei volunteered to help his master, who during his stay in China learned to make healing herbal infusions there. So, he insisted on some herbs on vodka and cured the count with this tincture. The barber received a great reward for his labors, and the vodka infused with herbs according to his recipe was called so in his honor - Erofeich.

For the preparation of infusions, vodka with a strength of 40 ° is used, fresh or dried plants.

Also, consumer tinctures are made with moonshine and alcohol.

Tinctures contain up to 30% sugar. They are less sweet, but stronger than liqueurs.

Tinctures are "simple" (made from one fragrant substance), and "prefabricated" (prepared on mixtures of a number of seeds, herbs, roots, etc.)

Vodka is insisted:

- on fresh herbs and leaves for 2-7 days (depending on their type),

- on berries, seeds and roots - 4-6 weeks,

- on tender berries(strawberries, raspberries, blackberries) - no more than 2 weeks.

After infusion, the drink is filtered through filter paper or cotton wool, without squeezing them. Store tinctures in dark, tightly closed bottles in a cool place, but not in the cold, which can cloud them.

Tinctures can be tinted in different colors. So, saffron gives vodka yellow, mint - green, blueberry - blueberry color, sunflower seeds - purple, pine nut shell - brown.

Tinctures are used as in pure form, with water or ice, and in cocktails.

Any tincture can serve as an aperitif.

Types of tinctures

Sweet liqueurs, as well as liqueurs, are prepared mainly on fruit and berry raw materials. However, the tinctures contain less sugar and are more potent. This group of tinctures is represented by: Apricot, Lingonberry, Cherry, Blackberry, Cranberry, Coffee aroma, Lemon, Nezhinskaya mountain ash, Ogonyok, Sea buckthorn, Rowan on cognac, etc.

Semi-sweet liqueurs with moderate sweetness have a higher strength (45%). They are prepared with alcoholized juices, fruit drinks and infusions. This group is represented by Vishnevaya, Dainava, Palanga, etc.

Semi-sweet, low-grade liqueurs (20-28%) differ not only in strength, but also in a lower content of total extract, including sugar. The consumer properties of these drinks are formed due to the extractive substances of juices and fruit drinks, as well as the presence of sugar and citric acid. The group is represented by Vostochnaya tinctures, Forest fairy tale, Yuzhnaya, Ryabinka, Suzdal.

Bitter (strong) tinctures contain a maximum amount of alcohol –30 - 60% vol. with a low sugar content of 0 -7%. The main source material for their manufacture is essential oil and spicy aromatic raw materials. Some products contain a small amount of sugar to soften the taste (up to 7 g / 100 cm3). Bitter liqueurs differ from vodka in aroma, bitter-spicy, and sometimes pungent taste.

The group of bitter tinctures includes: Anisovka, Belovezhskaya, Erofeich, St. John's wort, Cossack, Kuban amateur, Mint, Petrovskaya, Pomerantsevaya, Starka, Starokievskaya, Strizhament, Ukrainian with pepper, etc.

So, for example, for Anisovka and St. John's wort, for others this set includes 15 or more components. An example of multicomponent products can be Erofeich bitter tincture. For its production, the fruits of cardamom and anise are used, as well as various parts of lemon balm, St. John's wort, mint, oregano, thyme, sweet clover, curly mint, garden marjoram, white beetle, yarrow, wormwood, tripoli and cardobenedict. Petrovskaya tincture is prepared on dry kvass (rye bread crumbs) and cognac with the addition of a small amount of sugar. Distinctive feature Hunting tincture is a high sugar content - up to 20%.

Low-degree bitter liqueurs have a strength of 25–28% vol. and are characterized by pungency or piquancy of taste. Thus, infusions of red and black pepper and ginger give the tincture Ginger pungency, and infusions of galangal and kubeba give bitterness, camphor-resinous aftertaste and aroma. This group of tinctures is not numerous. In addition to Ginger, it also includes Ukrainian steppe, Polevaya, Streletskaya tinctures.

The group of consumer tinctures includes dessert drinks, aperitifs and balsams

Dessert drinks are distinguished by their lightness due to the minimum alcohol content - up to 16% vol. In other respects, they have a lot in common with sweet liqueurs. Due to the low strength in dessert drinks, the specific aroma and taste of fruit and berry raw materials are more pronounced, which is used for their preparation (alcoholized juices, fruit drinks, less often infusions).

The most common dessert drinks are Yellow leaves(based on quince, cherry plum and alcoholized apple juices), Golden (on alcoholized apple juice, kurati juice and orange peel infusion), Klyukovka (from alcoholized cranberry juice). This group also includes Cherry, Kalinka, Lemon, Raspberry, Autumn dessert, etc.

Aperitifs are tonic drinks that are also used to improve appetite and food absorption. They are produced from alcoholic infusions of medicinal and essential oil plants, dry grape wines, tinctures, liqueurs. Aromatic essences are also used in blends. When using aperitifs, they, like punch, are diluted with mineral water. This group of drinks includes Aronia, Medea, Morskoy, Nevsky, Original, Riga, Stepnoy, Surprise, Troika, Yuzhny, etc.

Aperitifs are widely spread in such European countries as France, Italy, Belgium, Hungary, Poland, etc. In these countries, bitters are also referred to as aperitifs (Gorky picon, Gollandsky bitter, etc.).

Balms are also bitters, but they have a high alcohol content (45% vol.). They are also distinguished by the multicomponent composition of spicy essential oil raw materials, which are used to obtain alcoholized balsamic infusions. Unlike all other alcoholic beverages, balsams exhibit medicinal properties. They are recommended for use in various diseases. This group of drinks includes: Bittner, Riga Black, Moscow, etc.

In the manufacture of each balm, sometimes more than 40 are used different types raw materials. For example, Riga Black Balsam is a mixture of rectified ethyl alcohol of the highest purity, as well as infusions of medicinal aromatic herbs, flowers, fruits ..

Strong bitters are usually used instead of vodka and are served with spicy and salty snacks, meat and fish dishes.
