1 tbsp. l. dry mustard
4 tbsp. l. paprika
2 tbsp. l. garlic salt
1 tbsp. l. ground ginger
3 tbsp. l. ground white pepper
1 cup non-fat cream
1 egg, beaten
1 chicken, cut into pieces; brisket should be cut into two parts for even frying

Preparation:

Mix flour and all spices in a cup.

Combine cream and egg in another cup. Soak the chicken in the cream mixture at room temperature for 20-30 minutes.

Remove the chicken from the cream mixture and wait for the excess cream to drain. Dip the chicken pieces into the flour and spice mixture so that the whole chicken is covered, shake off the excess. Place the chicken on a wire rack and let rest for 20 minutes.

While the chicken is settling, pour 7-8 cm of butter into a thick-walled, high-sided saucepan (or cauldron) and heat over high heat to 175 ° C (use a kitchen thermometer to control the temperature). When the temperature reaches 175 ° C, reduce the heat to medium. Fry 3-4 pieces of chicken until golden brown for 15-18 minutes, turn once.

I warn you right away that this is an experiment, and as often happens with the preparation of a new dish in artisanal conditions, not always everything goes smoothly the first time. In the step-by-step recipe, I tried to write down all my notes and recommendations, which I will definitely try to take into account next time.

Recipe for making KFC spicy wings:

    If necessary, clean chicken wings of feather residues, rinse and dry with a paper towel.

    Then we cut the wings into 3 parts. For cooking, we only need the first 2 parts of the wing. But, the most extreme part can be used to make broths or feed to your pets.

    PS: Wings, like all liquid ingredients for batter, should be at room temperature.

    If you want, you can add a little turmeric, but it has a fairly rich taste and aroma, so the main thing is not to overdo it with this ingredient.

    P.S.: I followed the recipe and, to save time, dry-breaded several portions of the wings at once.

Therefore, I simply have no right to be silent, besides, absolutely anyone can fry a whole mountain of such chicken wings!

I always thought that the wings just need to be breaded in special "bread crumbs" and branded spices and deep-fried. I tried everything, but either the chicken inside near the bones remained raw and tough, or the breading tended to char, I lowered the temperature of deep-frying - it seemed to be normal inside, but the crispy crust was oozing out with oil.
And the first secret turned out to be surprisingly simple - before you fry the chicken, you must first boil it!

1.First, we cut the chicken wings into 3 parts by joints - forearm, shoulder and "hand". First, it is more convenient to work with such pieces; secondly, it is easier to eat, and, thirdly, the very last part of the wing is absolutely unnecessary for this dish.

With this "unnecessary" spare part, you can act in a humane way - sprinkle with lemon juice, add salt and pepper, some aromatic herbs and leave to marinate for half an hour, and then deeply fry in very hot oil - so that it crunches and eats on your teeth all without a trace. It's delicious, and for certain lovers it is a real delicacy!

2. Put the split wings in salted water, put on fire and bring to a boil. This also has its own tricks.
As soon as the water boils, remove the foam and remove the pan from the heat. Now completely cool the wings right in the broth to room temperature.
Think not cooked? Figs there! I have never tasted a more tender cooked chicken meat in my life! The fact is that such small pieces do not require long cooking, and in the hot broth they themselves will reach the desired readiness.
By the way, this stage can be done on the eve of the party, leaving the saucepan with wings in a cool place. Just do not be surprised when the next day you find a real chicken jelly in the pan - the wings contain a lot of gelling substances))

3. Next, prepare the rest of the ingredients - flour, ice cream and cornflakes.
I will not say anything about flour - ordinary wheat flour.
Lieson is a beaten egg with salt and a little water (or without it). If you just want the taste of chicken - do not add anything else to the ice, if you want pungency and piquancy - feel free to throw garlic, hot pepper or a few drops of Tabasco there, fragrant herbs - whatever your heart desires. Beat with a blender until smooth and you will be happy.

It is advisable to look for cornflakes with passion on the supermarket shelf. The fact is that almost all of them are sold in sugar glaze, but why do we need sweet chicken? With a little tenacity, unsweetened cereals can be found in the healthy and diabetic food sections.
We crumple them right in the bag to small pieces and a convenient fraction.

We compose all the ingredients next to each other, put the plate for the blanks closer, and heat up the oil for deep fat on the stove.

4.With chicken we do this - first we dip it in flour, then we dip it in ice cream, then we roll it in flakes. At this stage, let the piece dry out a little - so the flakes will firmly stick to the chicken skin and will not fall off when frying. We "dry" for 15-20 minutes, turn over the wings a couple of times.

5. And now we fry! Heat a saucepan or cauldron with oil to 180 degrees Celsius. Don't have a dedicated thermometer? Use ordinary Chinese sticks - dip them in oil, if bubbles come from the stick, then the desired temperature has been reached.
Dip the wings into deep fat and fry for about 3 minutes. Do not try to put the maximum number of wings into the pan - the temperature of the oil will drop sharply and it will take longer to fry and more oil will be absorbed. 5-6 pieces at a time is normal.
