The main components of an electric meat grinder

Consider the main components and components of electrical models and explain the tasks that they perform in the device.

Housing with motor and gearbox

The main components of any electrical model. The engine is necessary to transmit the movement to the working parts of the meat grinder (auger). The gearbox reduces the speed of the motor and increases the torque (the force with which the shaft rotates). Its mechanism consists of several gears of different diameters (plastic or metal). The plastic gear reducer is the most common option. It costs less and weighs less, however, if the motor is jammed (abrupt stop due to overload), the teeth of the gears may break. The design with metal gears is considered more reliable, is less common, weighs more and costs a little more.

In addition to the motor and gearbox, the housing can hide: on, off and reverse button with terminals, control board, fuses. The presence of these components depends on the specific manufacturer and design features of the model.

Screw


This is a helical working shaft. Its main task is to move products to the exit. In the process of moving, he picks up the pieces, crushes them, dividing them into portions with the ribs, and pushes them towards the knife. A long shaft with a lot of turns will prepare food better for slicing than a short one. In good meat grinders, only a metal screw made of stainless materials is used.

Receiving chamber

A metal nozzle in which food is processed. On the inside, it has edges that facilitate the passage of the meat and help the auger push it towards the knives. A knife, grate and auger are inserted into the receiving chamber, the products are loaded through the neck at the top. Most often, this nozzle is one-piece, however, there are a number of models in which the camera can be disassembled. For example, in a Philips HR2743 / 00 meat grinder, it can be opened in two parts for rinsing under running water. And in the Philips HR2723 / 20 model, a special sleeve is inserted inside, on which all the remains are collected. The receiving chamber itself remains practically clean.

Tray

Placed on top of the neckline, facilitates and speeds up the loading of products. Before processing, it is convenient to put the cut pieces in the tray, and then direct them into the neck with a pusher. The most reliable and convenient is a wide cone-shaped metal tray that is resistant to mechanical damage.

Knife

Required for cutting and chopping food before passing it through the wire rack. Knives from different manufacturers may differ both in shape and in the composition of the material. The best option is a self-sharpening stainless steel blade that does not require special maintenance.

Lattices

Depending on the size of the holes in the disc, the grids are divided into 3 categories:

Union nut

Holds the auger, knife and grate in one position, fixes the structure during assembly. Stuffing is partially in contact with the union nut when passing through the grate, therefore, like all the main working elements, it must be made of stainless steel. Otherwise, the products may oxidize. On the outside, the nut has ribs that help to unscrew it after the end of work.

The main components of a mechanical meat grinder

Many components in electrical and mechanical models are identical and fulfill the same role (union nut, auger, grates and knife), so there is no need to dwell on them in more detail. Also in manual meat grinders there are additional attachments, however, their range is not so great. In the best case, manufacturers complete the device with a set of additional grates and a nozzle for cookies. Let's consider only those components by which these electrical and mechanical models are fundamentally different.

Frame

In fact, in mechanical models, it is a cast receiving chamber mounted on a table. In the upper part, it has a socket (meat receiver) through which the product is laid. In some models, it is offset from the center of the case or beveled at the base. This shape of the bell helps the auger to grip the loaded pieces. The wider the hopper, the easier it is to fill. In terms of composition, the body can be cast iron or aluminum. Each of these materials has advantages and disadvantages.

Top and bottom shoe with clamping screw

This is the name of the upper stops and the lower clamp, which fix the body of the meat grinder on the table top. In order for the fasteners to leave no marks on the surface, it is necessary to choose a model with plastic or rubber gaskets. The clamping screw moves the lower shoe upwards, allowing the grinder to be secured to the table top. In modern models, manufacturers sometimes replace the shoes with a vacuum suction cup.

Lever

Attached to the auger, installed at the rear of the housing. With its help, the shaft and the knife are set in motion. The handle is fixed with a plastic or metal screw.

The physical principle of the electric meat grinder

The working body of the auger electric meat grinder (EMC) is identical to a conventional manual meat grinder, but the auger receives the rotary motion from the electric drive. When rotating, the auger captures the processed product, which is fed into the feed neck of the housing, and moves it to the cutting device - a knife mounted on the auger and a grate.

The product pressed into the holes of the grate is cut off with a rotating four-blade knife tightly fitting to the end of the grate. Under the pressure of the subsequent portions of the product, which are continuously transported by the auger, the crushed product is squeezed out from the openings of the grate in the form of minced meat.

In the Electric Meat Grinder (EMC) chopping (grinding) of the product occurs due to its chopping with sickle-shaped plate knives directed in opposite directions. Rotational motion with a high frequency (over 8000 rpm) sickle knives are obtained from an electric motor, on the shaft of which they are fixed.

The main indicators of the quality of electric meat grinders

What you should immediately pay attention to when choosing an electric meat grinder is its power, it is she who is the main indicator of the capabilities of the electric meat grinder, because if the power is not enough, the machine will become completely useless in the kitchen. An excellent power indicator is a value of 800 W, the optimal one is 500-600 W, however, there are mini models with a power of 200-400 W. The second important parameter when choosing is the material from which the device is made. In general, there is nothing wrong when a special food grade plastic is used for this, which can withstand the loads transmitted to the case.

Internal parts such as grates, knives, auger must necessarily be made of metal, since they take on all the loads during the operation of the device. The auger is the main part of the spiral shape, attachments and knives are attached to it. As it rotates, the auger also moves the meat from the inlet to the outlet of the appliance. It happens that electric meat grinders have two screws: a plastic one for fruits and berries and a metal one for meat, for example, the Tefal ME7011 model. A meat grinder, the body of which is completely made of metal, will be more stable, however, it will add in its mass.

The knives are just as important as the auger. Knives should be made of good steel, they also can be sharpened periodically, and the frequency of this process will depend on the quality of the steel. However, there are models of meat grinders that do not need to sharpen knives, they are either made of high quality steel, or are self-sharpening.

Reverse or reverse scrolling, that is, the rotation of the auger in the opposite direction. It is used in those cases if you have a stuck core, then using the reverse, the auger will return it to the inlet. If the electric meat grinder does not have such a function, then you will have to do it all manually, disassembling the device.

Motor protection can be provided as an automatic circuit breaker or electrical fuse, or as a mechanical interlock. However, both types of protection are designed to protect the motor from overload and overheating.

Another indicator of the quality of electric meat grinders is the gearbox. In the gearbox to reduce the cost of the structure, plastic gears have recently been used, they are less reliable than metal gears and are suitable where there are no large loads, or the resource of the device becomes 2 less. Fortunately, imported manufacturers offer assembled gearboxes that can be replaced at home or in a special workshop for the repair of household appliances.

A meat grinder is a kitchen appliance with a mechanical or electric drive for crushing and grinding food.

The meat grinder consists of:

  • cases (material - stainless steel, aluminum, cast iron, plastic);
  • receiver (tray for direct product placement);
  • auger (element that feeds products to the knife);
  • four-bladed knife;
  • lattice (mesh / disc).

A product pre-cut into small pieces / slices is put into the meat grinder on top. Getting between the turns of the screw conveyor (auger), it is transported to the knife.

On the front of the auger there is a "finger" on which the knife is mounted. At the end there is a shank that is driven by a handle or an electrical mechanism.

The knife, tightly attached to the fixed grate, rotates with the auger. Due to this, the product is crushed. Passage and ejection through the holes is ensured by feeding a new portion of the product.

Types of meat grinders

Household appliances are divided into two types:

Mechanical meat grinder operated with a handle. The device is fixed to the edge of the table. For this, the bottom of the case is equipped with rubber feet and a screw clamp.

The latter, twisting, tightly presses the legs to the table top, which prevents the device from moving during operation.

The handle turns the spiral shaft that carries the food and rotates the knife. Adhering to the grate, the blades of the knife grind the product, and it protrudes out through the holes.

In an electric grinder the motor is located inside the housing, it is operated by a button, and there is no need for a handle. At the bottom of the case, rubberized legs must be placed, which perform several functions:

  • prevent slipping or displacement of the device during operation;
  • antistatic;
  • suppress vibration when the engine is running.

Classes:

Top-class meat grinders are distinguished by their performance. Their main function is to grind meat, poultry and fish for minced meat.

Household meat grinders with minimum power, without additional modes and functions.

  • High: from 1500 to 3000 W, productivity on average 2 kg / 1 min.
  • Average: from 800 to 1500 W, productivity on average 1.5 kg / 1 min.
  • Small: from 400 to 800 W, productivity on average 0.8–1.5 kg / 1 min.

Characteristics of meat grinders

Performance

In mechanical meat grinders, this indicator depends on the force applied by a person. On electric models, performance indicates the average weight of the product processed in 60 seconds.

It is widely believed that performance is directly related to power, but this is not always true. There are models with the same power, and at the same time, their performance varies by 1.5, or even 2 times.

In other cases, electrical appliances with low power have the same performance as more powerful models.

In household kitchen appliances, it ranges from 400 W to 2000 W. The power is divided into nominal and maximum.

Nominal- constant power, at which the meat grinder works in normal mode, but not longer than 15 minutes. After that, a long rest is required.

Maximum- the upper threshold of the meat grinder when processing small bones, veins, cartilage. A strictly defined time is used, which manufacturers must indicate in the instructions.

Most often, it does not exceed 60 seconds. It is recommended to use this mode as rarely as possible when grinding:

  • frozen meat;
  • stringy or old meat;
  • bones.

The overwhelming majority of meat grinders have a power reserve. But working in an emergency mode negatively affects the durability of the motor.

All electric models are equipped with motor protection against overloads and overheating.

Automated power breaker

Consists of two metal plates. In normal operation, they are in a closed position. If the motor overheats, then the consumption of electricity increases.

After a short time, when an excess of current is collected on the plates, they are disconnected. The device is de-energized and the next start-up is possible after the motor has cooled down.

Heating element

A plastic fuse that is designed for a specific heating threshold. If an object falls into the meat grinder, which the knife and auger cannot cope with, the motor continues to run and heats up.

When a critical temperature is reached, the fuse bursts, the engine is blocked and the device is disconnected from the network.

Loading tray (platform / tray)

  • Designed for convenient and safe feeding of products into the mouth for processing.
  • In electrical appliances with a narrow receiver neck, it is completed as a separate part.
  • Made of metal or plastic.
  • Installed from above.

The manual meat grinder is equipped with a wide mouth. Therefore, the use of an additional tray is not required.

Frame

The mechanical meat grinder is made of three materials:

  • stainless steel (high strength and corrosion resistant material);
  • aluminum (light weight);
  • cast iron (heavy, practical, durable).

Electric meat grinders have 3 types of material from which the body is made:

  • plastic;
  • metal alloy;
  • stainless steel.

The main application is grinding meat into a homogeneous mass for minced meat.

Additional use:

  • shredder (vegetables / fruits);
  • chopping (ice / nuts);
  • making mashed potatoes, sauces and juices.

A food pusher is included with electric meat grinders.

This is a necessary precaution to avoid injury, because the number of turns of the auger shaft in electrical devices is at least 5 times higher than when manually rotating a mechanical meat grinder.

  • Discs for minced meat. The most common and well-known grates / nets included in any meat grinder kit. They differ in diameter (from 3 to 9 mm) and the number of internal holes.

  • Drums for grater / shredder. Grater in the form of a hollow cylinder with various types of holes for vegetables and fruits.
  • Cutlet mold. Uncommon detail. Thanks to the mold, the minced meat is divided into equal, ready-to-cook portions.
  • Tomato / soft vegetable attachment. A hollow cylinder with fine holes through which juice and pulp seep.
  • for citrus fruits. Cap-shaped nozzle. Inside, she leaves a zest, seeds, peel. Only juice is poured out.

These include not only attachments, the completeness of which varies depending on the functionality of the meat grinder and its power, but also additional discs and knives.

  • In the majority of models of electric meat grinders, there is an automatic reverse function. It is necessary if a vein or other product is screwed onto the auger that the meat grinder is not able to process.
  • In mechanical meat grinders, reverse is also provided. To do this, it is enough to make a few turns of the handle in the opposite direction.

  • Metal parts are capricious to maintain. If you do not dry them properly in time, rust and traces of corrosion often appear.
  • The electrical cord is not long enough.
  • High noise level during motor operation.
  • The meat grinder performs poorly as a grater / shredder. The cylinders are made of thin material, which leads to deformation of the nozzle.

  • The reverse starts only after a complete stop of the meat grinder.
  • Large dimensions.
  • The auger cannot cope with the veins, they wind up, and you have to use the autoreverse.

  • Plastic gears are fragile and break easily.

The complete set is directly related to the price of the electric meat grinder. The more nozzles are attached to it, the higher the cost. This rule will help when choosing the meat grinder that will become an indispensable assistant in the kitchen.

Performance and power

  • The optimal solution for occasional use is the choice of an electric meat grinder with a power of 800 W to 1500 W and a productivity of 1.5-2.5 kg / min.
  • If you have to use the meat grinder often, you should pay attention to models with a power of 1500 W and a productivity of 2 kg / min and above.
  • For large volumes and frequent use, it is preferable to choose from the equipment that consumes up to 2000 W with a performance of up to 3 kg.
  • Electric meat grinders of this power are not suitable for home cooking anymore, they are designed for use in public catering places.

Reliability

The material from which the body, auger and knives, grates, attachments are made, must be of high quality. It is important that it does not contain harmful substances. It is advisable to choose parts made of metal, not plastic.

Noisiness

The lower this indicator, the more pleasant and easier it is to work with the meat grinder. The highest threshold is 82 dB. The human body normally perceives noise in the range from 70 to 75 dB. Acceptable vibration indicators range from 60-70 dB.

Mechanical meat grinder:

  • Before starting work, you must make sure that the meat grinder is secured, and all parts are installed in their places.
  • The product is put into the receiver, which has been cut into pieces or slices in advance.
  • When pushing towards the auger, it is important to remember the safety rules and to protect your fingers.
  • After the completion of the work, the meat grinder is disassembled, the parts are washed and dried.

Electric meat grinder:

  • Make sure before you start chopping meat or other food that there are no bones in it.
  • Chop the meat for chopping into medium-sized chunks, strips or cubes, and thaw frozen. This will prolong the life of the knives and the motor.

  • Immerse the housing, wire or plug of the appliance in liquid.

  • Leave the device in working mode if there are children or animals nearby.
  • Place the device on or near hot surfaces,.
  • Carry / move the device using the power cord.
  • Handle the electrical cable with wet hands.
