In addition, I like this recipe because you can "hide" the remnants of yesterday's rice porridge in it. After all, you don't need a lot of it here - only 1 cup. If you don't really want to cook a little rice in milk for bread, then you can use yesterday's leftovers, which no one wants to eat today.

Such bread will be prepared - this irreplaceable assistant in my kitchen never ceases to delight with her "skills". All baking in it turns out to be very airy - whether it be bread or a cake, and if I cook an ordinary yeast dough in order to bake something in the oven, then it always comes out very successful - soft and tender.

In general, she does everything in the best possible way, and besides, she significantly saves my time, because, most often, all that is needed is to abandon all the products in 5-10 minutes and select the desired program. And that's it! This is how you can effortlessly cook fresh homemade cakes literally every day.

But let's go back to our rice bread and bake it. Unlike many other recipes, this one is somewhat different - you will need to control a little the process of kneading the bread itself. If necessary, you will need to add a little flour during kneading (or vice versa, add water). But do not be afraid - there are no difficulties - just look at the bun, because if you have used the oven more than once, then you know how the dough should look like before baking.

To improve the taste of the bread, we can add 2 tablespoons. rice flour. Then we will already have a masterpiece - bread with rice flour in a bread maker.

To make rice flour, add 2 tbsp. rice into a coffee grinder and grind it to powder.

Ingredients

  • Boiled rice in milk - 1 cup
  • Water - 240 ml
  • Sugar - 2 tablespoons
  • Salt - 1.5 tsp
  • Vegetable oil - 2 tablespoons
  • Flour - 3-3.5 cups (mixing 0.5 cups is possible)
  • 2 tbsp rice flour (optional)
  • Dry yeast - 2 tsp

Bread with rice flour in a bread maker: a recipe

  1. So, put the rice porridge, cooked in milk, in a bowl. The porridge should not be thick, but on the contrary, runny.
  2. We pour in water.
  3. Add salt and sugar.
  4. Pour in vegetable oil (by the way, you can replace it with butter).
  5. Now add wheat flour (sifted) and yeast. While the flour is adding 3 cups, and if you later see that the bun is somewhat liquid, then add half a glass more (as practice shows, more than one glass should never have been added). If you have rice flour on hand, then we will fall asleep now too.
  6. We set the form, select the "Regular bread" program and leave the bread maker until it kneads the dough. Then we look under the lid, evaluate the dough bun and, if necessary, add flour, or pour in water (this is if the rice porridge was very thick). And then we leave until the bread is baked. And after 3 hours we take the bread out of the mold, let it cool under a towel and proceed to tasting the airy and aromatic rice bread!

Both an adult and a child can detect celiac disease. A distinctive feature of this disease is a lifelong adherence to a strict diet that excludes foods containing gluten.

What is Gluten Free Bread?

Products containing gluten are extremely varied. These are millet and rye breads, pasta, pastries, etc. It is also worth noting that gluten can be contained in a latent form in meat processing plants, various sweets, drinks, and even medicines. Therefore, people suffering from gluten intolerance need to take care of what they eat. The food industry is now producing gluten-free products, which has allowed sick people to breathe a little more freely.

However, these products are often extremely expensive, and not every family can afford to buy them. But you want to pamper yourself with flour! Such an important product as bread can be prepared by yourself.

What is gluten-free bread and what is it made of? Most often, bread is made from wheat and rye, which is extremely unacceptable for people with gluten intolerance. In case you want to make gluten-free bread right at home, you will need to use the appropriate flour. Acceptable types of gluten-free flours include buckwheat, corn and rice flours, as well as millet and amaranth flours. In some stores, you can buy ready-mixed formula. This blend is gluten free.

Gluten-free bread is different from ordinary bread, it turns out less fluffy, it is often dry. Homemade bread is stored for a very short time, which means that it must be consumed as soon as possible, otherwise it will deteriorate. It is highly discouraged to use the same tools for making gluten-free and gluten-free food, this also applies to bread.

Oven recipes

Gluten-free buckwheat, corn and rice bread in the oven

  • a mixture of buckwheat flour (250g), rice (150g) and corn (100g);
  • instant yeast (8g);
  • flax seeds (2 tablespoons);
  • pumpkin or sunflower seeds (half a glass);
  • salt and sugar (1 tablespoon each);
  • water (up to 600 ml).

First, we prepare a mixture of three components, it is advisable to sift the flour used. Carefully start pouring water into the mixture, adding as needed. As a minimum, you usually need 500 ml of water, add more if necessary.

Mix the flour and water thoroughly until the dough is smooth and the lumps disappear. Put the resulting dough in a warm place for about 35 minutes. Then you need to prepare a container in which the bread will be baked. We put parchment paper in it and grease it with oil, so it will be easier to take out the bread later. After placing the dough in a container, we leave it for another half hour. We heat the oven to 220 degrees and put a piece of bread into it. After baking, take out the bread from the container and set for another ten minutes. Cooked bread must be cooled before use.

Corn flour and herb bread

  • corn flour (500g);
  • sugar (2 tsp);
  • herbs of provence (2 tablespoons);
  • table salt (1 tsp);
  • crushed flax seeds (80g);
  • water or milk (600-630ml);
  • active dry yeast (2 tsp).

Heat the milk on the stove to keep it warm. Add yeast and sugar to it. Next, add corn flour, crushed flax seeds, herbs and salt. Knead the dough and leave to thicken, after covering the dishes. After 50 minutes, knead the resulting dough again, if necessary, moisten it with a little water. Roll a lump out of the prepared dough, which will need to be left to rise. At this time, we prepare the oven and baking sheet. Preheat the oven to 220 degrees, put parchment paper on a dry and clean baking sheet. Place the raised dough lump on a baking sheet and bake at 220-230 degrees. Bread will be prepared in about an hour. After cooking, the bread must be cooled for several hours, after which it is ready for use.

Banana Rice Bread

Components required for cooking:

  • rice flour (400g);
  • water (300 ml);
  • salt to taste;
  • banana (3 pcs).

Boil the rice, trying not to turn it into porridge, but to get slightly dryish and crumbly. Peel the bananas and crush them into gruel. Add warm salted water, cooked rice (150 g), diluted yeast and banana gruel to the rice flour. Line the baking dish with parchment paper, place the kneaded dough there, cover with a bag, and then put it in a warm place for about an hour. Place the risen dough in the oven preheated to 180-200 degrees. The bread will be ready in about 40 minutes. The finished bread must be cooled, after which it is ready for use.

Gluten Free Bread in a Bread Maker

When preparing bread in a bread maker, you must carefully follow the instructions, which, by the way, can often be found in the documentation of your bread makers. The most important recommendation in making gluten-free bread is to place the ingredients in a strict order. First of all, you need to add water and salt, followed by the bread mixture (various types of flour, starch), and last of all - yeast. After kneading the dough, it is recommended to remove the flour stuck to the walls with a spatula. This must be done carefully. To make gluten-free bread, you can use either a special bread maker or a regular one. In the latter, it is recommended to use the cupcake setting when baking. In special bread makers there is a mode for baking gluten-free bread. The bread maker itself kneads the food, the dough rises in it for about an hour, and the bread itself is baked for about 50 minutes. In general, gluten-free bread is prepared differently in a bread maker.

You can make yeast-free sourdough bread or use yeast. We will learn how to make sourdough bread.

Making Sourdough for Gluten Free Bread

Ingredients required for cooking:

  • corn starch (2 tablespoons);
  • water (3-4 tablespoons);
  • sugar (1 tsp);
  • lemon juice (1 tsp).

Fill the starch with water and add the rest of the ingredients. For the starter culture to grow well, you need to keep it warm. For example, you can put it next to the battery. After two days, you need to add more starch and water, the same amount as added at the beginning of cooking. Then the starter must be fed twice a day. The finished sourdough smells tart and bubbles.

Usually a glass of sourdough is enough for half a kilogram of flour. In order for it to last more than once, make it larger, and store the finished starter in the refrigerator. You can always keep a new growing starter in a warm place, just take a couple of tablespoons of the finished one and feed.

Yeast-free bread

Ingredients required for cooking:

  • gluten-free cereal flour or purchased ready-to-use mixture (450 g);
  • corn flour (50 g);
  • sourdough (1 glass);
  • water (one or one and a half glasses);
  • olive oil (2 tablespoons);
  • sugar (0.5 tsp);
  • salt (1 tsp).

Pour water, salt, sugar and olive oil into the container of the existing bread machine. Then we add flour or ready-made mixture, and only in the last turn add the sourdough. We select the required mode and crust formation. When making bread, you can add various ingredients to give it an unusual taste. After readiness, the bread must be cooled.

Gluten Free Buckwheat and Rice Bread Recipes in a Bread Maker

Bread in a bread maker can also be prepared without the use of sourdough, using yeast. Consider three recipes for buckwheat and rice flour bread.

Buckwheat bread recipe. Ingredients required for cooking:

  • buckwheat bread mixture (0.5 kg);
  • instant yeast (1 pack);
  • sugar (30-40 g);
  • salt (1 tsp);
  • olive oil (30-40 g);
  • water (600 ml).

Pour water, salt, sugar, olive oil into the container of the bread machine. Then add the mixture and yeast. We select the required mode, adjust the crust formation. Be sure to cool the bread after cooking.

Another option for making bread is to use buckwheat and rice flour. Ingredients required for cooking:

  • buckwheat flour (270 g);
  • rice flour (130 g);
  • instant yeast (2 tsp);
  • olive or butter (1 tablespoon);
  • kefir (320 g);
  • sugar (1 tablespoon).

First of all, add kefir to the container of the bread machine, instead of which you can add milk or water. Add butter and sugar to kefir, only then add a mixture of buckwheat and rice flour. We select the required mode, adjust the crust formation. Be sure to cool the bread after cooking.

You can make rice bread in a bread maker. Ingredients required for cooking:

  • fine rice flour (200 g);
  • starch (corn or potato - 200 g);
  • kefir (110 g);
  • water (120 g);
  • egg (1 pc.);
  • butter (vegetable or butter, if butter is not prohibited - 3 tablespoons);
  • sugar (1 tablespoon);
  • instant yeast (2 tsp).

First of all, add kefir and water to the container of the bread machine. Add butter and sugar to the liquid, only then add starch and flour. We select the required mode, adjust the crust formation. The finished bread must be cooled.

Gluten-free bread in a slow cooker

Ingredients required for cooking:

  • rice flour (300 g);
  • active dry yeast (2 tsp);
  • egg (1 pc.);
  • water (200 ml);
  • salt (1 tsp);
  • milk (125 ml);
  • olive oil (1 tsp).

First, mix the slightly warmed milk with sugar and yeast, let the mass brew. In another bowl, mix the rice flour and the egg, then add the infused milk with yeast. Pour water into the resulting mixture and mix thoroughly, breaking lumps. Before adding the dough, grease the multicooker container with olive oil.

Gently pour the dough into the bowl, leveling the surface with a spatula. We place the bowl in the multicooker and wait for the dough to rise (the multicooker must be tightly closed). When the bread piece has risen, you can select the baking mode.

After cooking, you should wait 10 minutes for the bread to come out of the bowl more easily. We cool the bread - and you can eat.

When I was “getting acquainted” with my new toy - the VITEK VT-1991 ST bread maker, I was interested in what kind of function it is - “gluten-free baking”. The book contains a recipe for making rice bread (gluten free). Well, I tried to cook it too.

On a note:

Gluten, or gluten, is a protein in the seeds of cereal plants (its maximum amount is found in wheat, rye and oats), which determines the characteristics of the dough such as elasticity and firmness. Most people can consume it completely without any consequences, but some are intolerant to it. Therefore, they came up with all sorts of "gluten-free diets." Part of it is gluten-free bread made from rice, corn (whole), buckwheat flour and special baking mixes.

Gluten Free Rice Bread contains:

  • 3 eggs;
  • 3 tbsp vegetable oil;
  • 250 ml. water;
  • 1.5 tsp salt;
  • 3 tbsp Sahara;
  • 3 measuring cups of rice flour;
  • 1.5 tsp dry yeast.

Method for making gluten-free rice bread:

In a small container, beat eggs with a whisk with salt and sugar (quite a bit).




We put the blades greased with vegetable oil in a mold, pour water, vegetable oil and loose eggs.


I bought rice flour like this:


Sift flour into the mold, add yeast.


We install the form in the bread maker, set the program (for my VITEK VT-1991 ST this is the 6th program, weight, timer and "crust" with it are not available) and turn it on.


Dough kneading and baking starts (no proofing).




This is the kind of rice bread that turned out - quite even and pretty. The only thing I didn’t like about it was that when the baking came to an end, a very strong smell of rice casserole began to spread throughout the apartment !!! And I, as I immediately remembered, from childhood I hate rice casseroles! Fortunately, when the bread cooled down, it "lost" this smell, leaving just a not very obtrusive taste of rice .... In general, this bread is not for everybody!


And this is how gluten-free rice bread looks like in the context:

Rice flour bread is rather unusual, or rather unusual. White dough, unusual in structure. Dry and brittle structure of finished bread. We can say that this is bread for everybody, but for someone this bread is a necessity due to gluten intolerance.

This is not to say that rice bread is tasteless, no! It is very tasty, especially on the first day after baking, like any other baked goods. The bread has a peculiar aroma from rice flour, so in the process of kneading the dough I decided to flavor it by adding fragrant thyme. I think that it will be good with Provencal herbs too.

I kneaded the dough in a bread maker, and baked bread in the oven with small loaves and a small flat cake. But you can bake one loaf by lengthening the baking time.

Let's prepare the ingredients.

Prepare the thyme: rip off the leaves from the stem and chop them a little with a knife. You won't need the stems themselves.

In the bowl of the bread machine (hereinafter referred to as HP), load all the products, except for paprika and thyme, following the instructions of the apparatus. In my HP model, liquid components are first loaded: water, vegetable oil, egg, then salt and sugar, flour and dry yeast.

We turn on the program for kneading yeast dough. This process will take 1 hour and 30 minutes.

After about 10 minutes, the HP will emit a signal, which means that you can add additives to the dough, at this moment add paprika and thyme.

This is what the dough looks like at the end of the fermentation process. It has increased in volume quite a bit, it cannot be stretched like wheat flour dough, because there is no gluten in rice flour.

Shaping the rice flour dough will be easier if you brush your hands with vegetable oil. We lay out the dough into forms, filling them by 2/3 of the volume. Cover and leave in a warm place for 20-30 minutes, but for now, turn on the oven to warm up to a temperature of 200-205 degrees.

During this time, the dough has slightly increased in volume and looks more fluffy. On some loaves, I tried to make cuts, but I got rather dents.

Bake rice bread in a preheated oven until tender. The small loaves took 22 minutes to bake, while the flatbread took about 27 minutes. The finished bread will become light golden in color, small cracks will appear, and it will increase in volume quite a bit.

Let the bread sit for 5-10 minutes in the tins, then cool it completely on the wire rack.

Cutting rice flour bread should be done carefully and preferably with a serrated bread knife, so the bread will not crumble too much.

Making rice flour dough for baking bread is easy. Just follow our recipe (suitable for multicooker, bread maker, oven).

Ingredients: 2 teaspoons of yeast, 150 ml of water (milk), 300 g of flour, 1 teaspoon of salt, 120 ml of warm water, 1 teaspoon of sugar, 1 egg, vegetable oil.

How to cook:

- mix warm water with sugar, add yeast, leave for a few minutes;

- mix flour with egg and salt, add foamed yeast;

- add 100 g of water and stir until completely homogeneous;

- the consistency of the dough should resemble thick sour cream.

The dough is ready - you can bake the bread!


Rice flour cookies

Ingredients: vegetable oil, sugar, rice flour, banana, raisins, apple, nuts, cinnamon, soda, salt, nutmeg, ground cloves.

How to cook:

- Mix 2 cups flour, half a teaspoon each of salt and nutmeg, a quarter teaspoon of cloves, one and a half teaspoons of cinnamon and soda quenched with vinegar;

- separately in a blender, mix the banana, sugar and vegetable oil;

- add half of the flour mixture with spices to the resulting mass, mix, add chopped nuts, apple and raisins;

- add the rest of the flour mixture and mix thoroughly.

Shape into cookies and bake in oven for about 15 minutes.

Rice flour pancakes

Rice flour pancakes baking is not difficult. We share the recipe.

Ingredients: 1 cup flour, half a cup of milk, a quarter cup of water, half a teaspoon of sugar, half a teaspoon of salt, two tablespoons of starch.

How to cook: Using a sieve, sift the starch and rice flour, add sugar, salt. Pour in milk with water gradually, stirring occasionally. Stir the dough thoroughly and let it brew. Then you can bake the pancakes in a hot skillet.


Rice flour dumplings

Ingredients for the dough: 400 g of rice flour, half a glass of water, an egg, salt to taste.

How to cook: Mix egg, salt, water, pour into flour and knead the dough. Leave it on for 15 minutes, roll out and mold the dumplings with the desired filling.


Rice flour cakes

Ingredients: 200 g of rice flour, 1 teaspoon of vegetable oil (sesame is ideal with rice), 150 g of water, salt and herbs to taste.

How to cook: Heat the water and mix it with the rice flour. Then add oil and salt, then mix thoroughly. Wait for the mass to cool and knead the dough. Roll it out gently, sprinkle with spices and herbs to taste. Then roll the dough into a roll and cut it into round pieces. Roll them out and fry in a hot skillet. The cakes are ready.


Cheesecakes with rice flour

Ingredients: 200 g cottage cheese, 1 egg, 40 g rice flour, half a teaspoon of baking powder.

How to cook: Mix cottage cheese with egg, and flour with baking powder. Mix everything - you get a dough. Prepare syrniki from it and fry them. You can fry in refined sunflower or coconut oil. For a golden crust, coat each curd in flour before sending to the pan.


Rice flour muffin

Ingredients: butter 100 g, sugar 65 g, 2 eggs (3 if small), 1 glass of rice flour, soda, vinegar, a handful of any berries.

How to cook: Whisk the butter and sugar together. Add eggs, stir. Add vinegar quenched baking soda and flour. Mix the dough well, pour into molds, add berries. Bake for 25 minutes at 220 degrees.

Rice flour porridge

Rice flour porridge is an excellent product for children and dietary adults.

To prepare it, mix 100 ml of water, 100 ml of milk, bring to a boil and slowly add rice flour (cook in much the same way as semolina).


Rice flour pizza

If you follow this simple recipe, you have a wonderful gluten-free pizza.

Ingredients: butter (or Ghee butter) - 1 part, sour cream - 1 part, rice flour - 2 parts.

How to cook: Thoroughly mix butter and flour, then add sour cream to the dough. Stir, roll into a ball, put in a cool place for half an hour. Prepare the filling, roll out the dough, fill with the filling and send the future pizza to the oven to bake until tender.


Rice flour milk

Rice flour milk can be substituted for regular cow's milk in omelets and baked goods for people with lactose intolerance.

Ingredients: rice flour - 1 part, water - 4 parts, sugar (honey, stevia) - to taste.

Inventory: blender, bowl, tablespoon, sieve.

How to cook: Cover the rice flour with water and let sit overnight. Add sugar (honey, stevia) in the morning. Whisk in a blender, strain through a sieve.
