We will need:

  • Cod fillet – 0.5-0.9 kg
  • Lemon juice – 1 tbsp.
  • Wheat flour – 100-150 g
  • Spices at your discretion

For the marinade:

  • 200 g carrots
  • 1 large onion
  • Vegetable oil
  • Tomato
  • Vinegar 9% – 1 tbsp.
  • Salt, pepper (to taste)

  • We take the fish to work, wash it, peel it, cut it into small pieces (the product must be chilled or defrosted without excess moisture).
  • Place the fish in a bowl, add salt and pepper, pour in lemon juice (if you like new flavors, you can add special seasonings for fish), leave the fish in this form for 10 minutes so that it marinates a little.
  • Add flour to the chopped fish pieces and mix everything well.
  • Place fish pieces in a heated frying pan and fry until golden brown.
  • To prepare the marinade, prepare the vegetables: wash, peel, cut the onion into half rings, cubes or even smaller, as you like, fry over the fire until golden brown, add grated carrots (if you grate on a fine grater, the dish turns out more tender), simmer the vegetables on low heat until they become soft.
  • Season the roasted vegetables with tomato paste or ketchup (it will be tastier with homemade ketchup), add half a glass of water and simmer for a few more minutes. Another way: add tomato, salt and seasonings, vinegar to boiled water, add to the stewed vegetables, bring the mixture to a boil, and then simmer over low heat for another 5 minutes.
  • Prepare a container and lay out the prepared ingredients in layers: a layer of fish (the pieces should be very small), a layer of vegetables, etc. Housewives recommend starting and ending the laying out with vegetables.
  • Leave the finished mixture of fish and vegetables on the fire to simmer under the lid for another 15 minutes. If the marinade boils away, you can safely add more water.
  • Place the container with the delicious food in the refrigerator.
  • The dish is served to the table as a cold appetizer for main courses or with a side dish in the form of porridge or potatoes.

Cooking method
  1. We wash the fish, cut it into pieces and put it in a deep bowl to marinate.
  2. Sprinkle the fish with seasoning, pour in lemon juice, soy sauce and leave.
  3. Prepare the marinade in a slow cooker or in a frying pan. To do this, grate the carrots on a coarse grater, cut the onion into half rings, and cut the tomato into strips and sauté in sunflower oil with the addition of tomato paste and a small amount of water until tender. Salt and pepper. Let cool.
  4. Boil water, add salt, add bay leaf, a mixture of peppercorns and boil the cod. After boiling, cook for 10 minutes. Cool and separate from bones.
  5. Place part of the finished marinade on the bottom of the dish in which the fish will be marinated. Then lay out the deboned cod and spread the remaining marinade on top.
  6. Let it sit for 2-3 hours.

I’ve tried marinated fish before, but this was the first time I’ve cooked it myself, and somehow I’ve never had to buy cod. But it exceeded all my expectations!

When I bought this fish, I didn’t even know how to cook it. My mother advised me to cook cod with marinade, since its meat is somewhat dry for frying and baking. And under the vegetable coat it really turned out juicy and piquant.

But if you deviate a little from the classic recipe or do not keep the finished dish in the refrigerator for the allotted time, everything is lost! Thaw the cod, dry with a paper towel, cut into portions. Then add salt, sprinkle with black pepper and roll in flour.




Shake off excess flour. Fry the fish in a hot frying pan with a minimum amount of vegetable oil until golden brown for 7 minutes. Transfer from the pan to a plate.




Continue cooking in the same frying pan. Add a little oil and fry chopped onions and grated carrots. Cook for 5-7 minutes over medium heat, stirring occasionally.




To the golden onions and soft carrots add tomato paste, chopped tomatoes in their own juice (or fresh without skin), sugar, salt, paprika, cloves, bay leaves and peppercorns.






Mix all the ingredients of the marinade and simmer over low heat until tender, about 10 minutes. At the end of the process, add vinegar or lemon juice. To taste. Add salt and sugar if the taste is not harmonious.




Place the fried cod pieces in a frying pan. Distribute the marinade sauce evenly. Cook on the stove over very low heat for 10 minutes or place in a hot oven (130C) for 15 minutes so that the fish is soaked in the hot marinade. And you can whip it up.
Important: do not stir the dish!




Transfer the finished cod under the marinade into a deep bowl, cool at room temperature, then cover with cling film/lid and refrigerate for 2-12 hours.




Marinated cod can be eaten immediately after cooking, but after long-term cooling the dish becomes especially tasty.

Marinated cod is a popular “cheap and tasty” appetizer during Soviet times. This simple dish has many advantages:

  • it uses carrots and onions, cod or pollock, which are traditionally available to everyone - i.e. fish of inexpensive and common varieties
  • quite easy to prepare
  • Keeps for several days in the refrigerator, so this appetizer can be prepared in advance for the table.

For an appetizer you need to take cod, carrots, onions, tomato paste, frying oil, salt, pepper.

Remove scales from the cod and rinse.

Fillet it and cut it crosswise into strips 1.5-2 cm wide.

Season the fish with salt, pepper, and lemon juice. Let marinate for 10 minutes.

Bread the fish in flour.

Fry in oil on both sides until fully cooked.

Prepare the marinade. Peel the carrots and onions.

Sauté the onion in heated oil until translucent.

Grate the carrots on a coarse grater.

Add to the onion, simmer until half cooked.

Add tomato paste.

Add water (0.5 cups) and simmer until the marinade is completely cooked. If the paste is sour, add sugar; if it is sweet, add lemon juice. Vary according to your taste.

T cod is a fish that should be on the menu of every family. Some housewives, sighing, will say: “My family doesn’t like fish, so I don’t cook it...” Perhaps it’s worth changing the recipe. Moreover, you don’t need to look for something unusual and supernatural, or buy expensive, rare fish. It’s enough to remember the good old classic recipe for marinated cod, which we inherited from the Soviet past. The dish is easy to prepare, it uses affordable ingredients, and the taste is excellent!

When preparing cod according to the classic recipe, there is one caveat. You can use fillet or whole fish. It is preferable to select fish and remove the bones from it during cooking, as the fillet may turn out to be watery and may fall apart.

Ingredients

  • fresh fish (cod) - 700 g
  • onions - 2-3 pcs.
  • carrots - 2-3 pcs.
  • wheat flour - 100 g
  • tomato paste - 5 tbsp.
  • boiled water - 200 ml
  • vinegar - 1 tbsp.
  • vegetable oil - 6 tbsp.
  • dill
  • black pepper (peas)
  • salt

Step-by-step cooking process at home

  1. Prepare the ingredients.
  2. Start by preparing the marinade. Wash and peel the onions and carrots. Cut the onion into medium-sized pieces, chop the carrots on a coarse grater.
  3. Heat a frying pan, pour in half the amount of sunflower oil. Fry carrots and onions in oil for about 2-3 minutes, stirring. During this time, the onions will turn white and the carrots will turn bright orange.
  4. Add peppercorns (5-6 pieces) to the onions and carrots. They can also be ground and then added to the marinade. Add tomato paste, vinegar, salt and stir into the pan.
  5. Wash and finely chop the dill.
  6. Add dill to the pan with the marinade and add water. Stir evenly with a spatula. Now let the marinade simmer under the lid until the water boils. During this time, the marinade will prepare: the onions and carrots will become soft, and salt, vinegar and pepper will saturate them. Try what happened. Add salt or vinegar to taste if it feels like it's missing. It is a successfully prepared marinade that will ensure 70% of the success of the dish. In the future, its taste will permeate the fish.
  7. Now let's move on to the fish. You need to do everything as quickly as possible so that the marinade does not have time to cool. If you bought whole fish, gut it and cut it into pieces. Dredge the fish pieces in salted flour. Then place it in a heated oil (with the remaining vegetable oil) frying pan. Fry the fish on both sides for 2-3 minutes, and then remove.
  8. Select all the bones from the fish and remove them. Cut the remaining meat into small pieces.
  9. Divide the finished marinade into 2 parts. Cover the bottom of the pan with one, and move the other towards the edge in a mound.
  10. Now spread a heap of the remaining marinade on top of the cod pieces. Close the lid and leave to cook for about 14-18 minutes on the lowest heat. Then turn off the gas and do not open the lid. Let the cod under the marinade cook in a warm place and be better saturated with the taste and smell of the marinade.
  11. The marinated cod is ready! Serve it hot or cold - either way the dish turns out very tasty. Bon appetit!
