Nut milk It has an unusual taste, but it is healthy and nutritious. Thanks to its balanced composition, the drink saturates the body with the elements it needs, and most importantly, it has virtually no contraindications. You can prepare it at home.

What is nut milk?

Nut milk has long been included in the monastic diet. It fits perfectly into the Lenten menu, suitable for strict vegetarians and people who suffer from lactose intolerance.

Milk is extracted from a variety of nuts - walnuts, pine nuts, almonds, cashews, hazelnuts. There are even recipes with pumpkin seeds and sesame seeds. All you need for cooking is unroasted nuts and plain water. These ingredients will produce real milk, only with a more pleasant taste than traditional cow's milk.

Composition and beneficial properties

Nut milk is considered healthier than cow milk. Ancient monks used nut milk during fasting, as the drink contains high amounts of vitamins and microelements that the body lacks with a meager diet.

Preparing to cook

Tender and rich milk can be obtained from any nuts. The main thing is that they are not fried. Additional ingredients are water, and you can also use a little vanilla, cocoa powder, salt and sweetener or exotic turmeric.

Almonds absorb moisture longer than other nuts. Soaking it will require from 8 to 12 hours. Peanuts and hazelnuts need to be soaked for 8 hours, walnuts - 4 hours, and cashews - only 2 hours. The advantage of pistachios and Brazil nuts is that you can prepare milk from them immediately by pre-soaking them no need.

Classic recipe

Nut milk is prepared from nuts and drinking water in a 1:4 ratio. To make the drink more aromatic and thick, the proportions can be changed. Then you will need 1 part nuts to 3 parts water. You also need to stock up on a blender or juicer and a sieve.

Cooking with a blender

Mix nuts with water in a blender. Within 1-2 minutes, white milk of uniform consistency is formed.

Once blended, turn off the blender and strain the nut milk through a sieve. You can also use gauze. Stores also sell special bags for nut milk, but they are still quite rare.

Juicer preparation

A top-loading juicer is ideal for making nut milk. If the loading is horizontal, then there must be double gears.

Place nuts and water in standard proportions in a juicer. The result will be a liquid that will resemble cream in consistency. If desired, you can strain the milk - this way it will be homogeneous.

Pistachio milk

The strong aroma of pistachios and delicate green aroma make this drink unusual and interesting. To diversify the taste, you can add a pinch of ground cardamom. This drink is prepared very quickly because pistachios do not require pre-soaking, unlike other types of nuts. You can drink this milk on its own or add it to cocktails or desserts.

To prepare 1 liter of drink you need to take the following ingredients:

  • 1-2 cups raw unsalted pistachios;
  • 1 vanilla pod or 1 tsp. powder from a bag;
  • 4 glasses of clean water;
  • 1-2 tbsp. l. sweetener (optional)

Chocolate hazelnut milk

The drink prepared according to this recipe is a delicious and nutritious cocktail. It will be an excellent option for breakfast or dinner.

To prepare 1 liter of milk, you will need the following ingredients:

  • 1-2 cups raw unsalted hazelnuts;
  • 2 tbsp. l. cocoa powder;
  • 1 vanilla pod or 1 tsp. vanilla powder from a bag;
  • 4 glasses of purified water;

Almond milk with turmeric

When cold, this drink can replace a delicious dessert. When you have a cold, almond milk with turmeric is good to drink hot - it will improve your well-being and get you back on your feet faster.

To prepare 1 liter of milk you need to prepare the following ingredients:

  • 1-2 cups raw unsalted almonds;
  • 1-2 tbsp. l. turmeric powder (it has a mild taste, so don't be afraid to add more of this spice);
  • 4 glasses of clean water;
  • a pinch of sea salt (optional);
  • 1-2 tbsp. l. sweetener (optional).

Vanilla cashew milk

This drink has an amazing aroma and a very delicate creamy taste.

To prepare 1 liter of drink you will need the following ingredients:

  • 1-2 cups raw unsalted cashews;
  • 1 vanilla pod or 1 tsp. extract from a sachet;
  • 4 glasses of purified water;
  • a pinch of sea salt (optional);
  • 1-2 tbsp. l. sweetener (optional).

How to properly consume and store the drink?

Nut milk differs from traditional cow milk not only in the absence of lactose and a more interesting taste, but also in its compatibility with vegetables, berries and fruits. The only exceptions are potatoes, melon and bananas. These products should not be consumed with drinks.

You can make smoothies, cocktails, ice cream, yoghurts and even homemade kefir from the nut drink. It is also added to any recipes instead of cow's milk. For sweetening, honey, Jerusalem artichoke or agave syrup are used. You can diversify the dessert with berry or fruit juice, nutmeg, cocoa powder, cinnamon, and vanilla beans. Nut milk is delicious, so you can simply drink it as a stand-alone drink. Just 1 small glass will replenish your strength after an intense workout in the gym or after a hard day at work.

Keep the milk in a closed bottle in the refrigerator. This is a perishable product. Its shelf life is no more than 3 days.

Nut milk is an indispensable product during strict fasting and for lactose intolerance. Vegetarians and raw foodists love it, it is useful for children, athletes, and those on a diet. This drink does not contain harmful substances, it contains a moderate amount of saturated fatty acids, but many vitamins and beneficial minerals. Just remember that nuts are a fairly strong allergen. If you are prone to allergies, milk should be consumed with caution.

Ingredients:

  • 3.5 cups water for preparing milk

Cooking method:

  1. Soak the nuts in a container with 2.5 cups of water and leave in the refrigerator overnight.
  2. The next day, drain the water from the nuts.
  3. Grind the finished nuts with 3.5 glasses of water in a blender for 40-60 seconds.
  4. Strain the finished milk using a strainer or gauze.
  5. Add nut milk to smoothies and healthy desserts! If you wish, you can sweeten the nut milk by mixing it in a blender with 1-2 teaspoons of honey or 2-3 dates until smooth.
  6. Milk is stored in a glass bottle in the refrigerator for 3-4 days.

P.S. From the remaining cake you can make healthy candies, granola or crackers! For example, to make candy, mix the nut cake with dates in a food processor or blender, then put it in the freezer for 30 minutes.

Hazelnut nut milk is a healthy and delicious alternative to animal milk. Prepared at home from two basic ingredients: hazelnuts and purified drinking water, the milk does not contain preservatives or sugar, has an incredibly delicious creamy taste with nutty notes, and looks just like regular milk, even milk foam forms when whipped. Despite its external similarity, hazelnut milk boasts a whole complex of useful vitamins and microelements in its composition. However, in order to preserve all the beneficial properties of the drink, nuts for making milk must be used raw, not pre-roasted. For the same reason, it is recommended to prepare nut milk in small portions and store it for no more than 3 days.

In its most basic form, hazelnut milk has a neutral taste. This option is universal, and if you want to diversify the taste of the drink, just add some dates, carob or cocoa, salt, spices, honey or other sweeteners to your taste.

To prepare hazelnut milk you will need: hazelnuts and purified drinking water.

Also, if desired, you can add a little ground cinnamon, salt or sweetener to taste to the finished milk.

Soak the nuts in cold water for 8-10 hours. During the infusion process, the nuts will absorb some of the water, so it is better to use purified drinking water for both cooking and soaking.

Rinse the soaked, softened and expanded nuts thoroughly and strain.

Place the nuts in a blender bowl, pour in 400 ml of drinking water and blend for 3-4 minutes.

If the blender is not very powerful, first add 150-200 milliliters of water to the nuts and beat for 2-3 minutes. When the nuts are ground to fine crumbs, add the remaining water.

During the beating process, the mixture will turn white and a lush “milk foam” will appear on the surface.

Strain the milk through cheesecloth or a thin cloth. Squeeze out the remaining nut cake, save and use for salads, smoothies and baked goods.

If desired, add a little salt to the finished milk (so the milk will be a little more like regular milk) or a pinch of ground cinnamon, any sweetener to taste - to obtain a sweet version of the drink.

Hazelnut milk is ready. Store the drink in the refrigerator in a clean, airtight container for up to 3 days.


Cow's milk is not always well absorbed by the human body. This is especially true for older people and young children (which is why most infant formulas are made with goat or soy milk). In addition, according to the book “,” cow’s milk protein may be the cause of some autoimmune diseases.

Walnut kernels contain fatty oil (up to 60-76%), proteins (up to 21%), carbohydrates (up to 7%), provitamin A, vitamins K and P, amino acids (asparagine, cystine, glutamine, serine, histidine, valine, phenylalanine). When making milk, some of the beneficial properties are lost, but most still remain.

Ingredients:

  • 1 cup shelled walnuts;
  • 3 glasses of water + water for soaking;
  • honey to taste;
  • a pinch of vanillin.

Preparation

Measure the nuts using a glass of any size and fill with cold drinking water so that it covers the nuts. Leave it in the refrigerator overnight. In the morning, take out the nuts, drain the water, pour them into a blender and pour three glasses (the same volume as you used for the nuts) of cold water.

Beat with a blender for several minutes until smooth and strain through cheesecloth. After this, you can add a little honey and vanilla to taste, or you can leave it pure. Shelf life: 2–3 days in the refrigerator.

You can make very tasty cocktails using this milk! First option: beat it with banana, dates (3-4 seeds, pitted), a pinch of cinnamon and honey. Second option: beat together with cinnamon, nutmeg, honey and dates (5-6 pieces). You can adjust the quantity of bananas and dates according to your taste.

Another option is to use nut milk as a base for cocktails with frozen berries (any you like) and honey, and also add it to coffee. The only thing is that this milk is not very homogeneous in consistency; when added to coffee, it separates into flakes and does not look very appetizing, so it needs to be stirred well.

Even though I don't really like walnuts, I liked the milk made from them! It has a pleasant taste and the coffee is simply amazing. If you feel the milk is not rich enough, add less water next time.

And don’t forget that this nut milk is very rich: 100 ml contains 79 kcal. You should not drink it in large quantities because nuts, although a healthy product, are quite difficult to digest. You don’t drink liters of cow’s milk, do you?

How to make nut milk

To make nut milk, you only need water and any unroasted nuts. The most delicious milk comes from hazelnuts, almonds and Brazil nuts. You can also use walnuts or pine nuts. Plant milk is also made from raw seeds: sesame, poppy or pumpkin seeds.

To make the milk truly tasty, it is better to soak the nuts in cool drinking water for a period of 4 hours to the whole night.

Soaking time for different types of nuts:

  • Almonds in order to become saturated with moisture, you need the greatest amount of time - 8-12 hours.
  • For hazelnut, macadamia and peanuts it will be enough 8 ocloc'k.
  • Walnut you need everything 4 hours.
  • A cashew - 2 hours.
  • From pistachios and brazil nuts You will get excellent milk even without soaking.

Ideal proportions for making nut milk - nuts and water 1 to 4. That is for 4 glasses of milk(about 1 l) needed 4 cups water and 1 cup nuts.

The ratio may change in one direction or another. For example, for more aromatic and thick milk, you can take more nuts and less water - about 1 to 3.

Place the nuts and water in a blender and blend thoroughly until smooth. After which the mixture is filtered through a sieve, cheesecloth or a special bag for nut milk.

Store nut milk in the refrigerator in a closed bottle. 3-4 days.
