  • Pork - about 1 kg and 500 g;
  • Dried apricots and prunes - 300 g;
  • Smoked brisket - 150-200 g;
  • Black tea - 1 glass;
  • Onion - 1 pc.;
  • Salt, mustard, other spices, garlic - to taste.

Cooking method:

  1. First you need to prepare the dried fruits. Pour the washed prunes and dried apricots into hot tea and leave to steep for about an hour;
  2. Then marinate the meat. For convenience, a piece of pork can be cut into a book shape and beaten thoroughly. Coat with spices and mustard, salt. Leave for 30-50 minutes;

  3. Prepare the chicken: rub the meat with salt and spices, place on a baking sheet;
  4. The final stage is to generously pour the prepared mixture over the meat;
  5. Bake the dish in the oven at 190-200 degrees for about an hour.

  • chicken - 1.5-1.8 kg.,
  • vegetable oil - 100 ml.,
  • French mustard (beans) - 2 tbsp. l.,

  • apple cider vinegar - 2 tbsp. l.,
  • egg - 1 pc.,
  • salt - to taste,
  • fresh corn - 2-3 cobs.

Meanwhile, mix all the ingredients for the sauce. Pour vegetable oil into a blender glass, add mustard and chicken spices (you can take ready-made ones, or you can choose your own favorites). Add egg, garlic (can be replaced with granulated garlic - 1 tsp), vinegar. Beat with a blender until smooth.


Pour all the sauce onto the chicken and carefully coat it with your hands on all sides, including the inside.


We take cling film, cover the dish with it, put it in the refrigerator for 8-10 hours, more if possible.


Take it out and place it on a baking sheet. We clean fresh corn, cut it into pieces, and place it around the chicken. In the meantime, preheat the oven to 200 degrees, set it without covering it with anything, literally for 10 minutes.


Remove from the oven, cover the chicken with foil, but the temperature remains the same. Cook for another 40-50 minutes.

That’s what I called a very tasty, juicy and beautiful meat dish. It’s not at all difficult to prepare; the deliciousness is indescribable. Try cooking and surprise your family and friends.

Products used:

  • pork - 1 kg.,
  • tomatoes - 2 pcs.,
  • hard cheese - 200 gr.,
  • garlic - 3 cloves.

For the marinade:

  • vegetable oil (olive) - 2 tbsp. l.,
  • lemon juice - 1 tbsp. l.,
  • soy sauce - 2-3 tbsp. l.,
  • mustard - 1 tbsp. l.,
  • salt - to taste,
  • pepper - to taste.

How to deliciously bake pork in the oven:

Select a good piece of meat, preferably, but not necessarily, an even rectangular shape. If you couldn’t choose a very even one, it’s okay, let it be whatever it is. We cut it into plates, approximately 7-10 cm wide, but without cutting to the end.


Mix all the ingredients for the marinade. Salt and pepper the meat to taste. Then carefully coat each piece of meat with the marinade, put it in a bag, or leave it in a dish, covering it with film. Place in the refrigerator for 10-12 hours to thoroughly marinate.

Take a baking sheet (or baking dish) and cover it with foil. Place the cut piece of meat on the foil. We cut the cheese, garlic, tomatoes into slices, and begin to “stuff” our meat. Between each slice of meat we put a piece of cheese, a few slices of garlic, and a slice of tomato.


In this way, we fill the entire “holiday accordion” to the end. Wrap in foil and place in an oven preheated to 200 degrees to bake for 50-60 minutes. Remove the finished meat from the oven. And most importantly, do not unwrap the meat immediately. Let it stand and languish for about 15 minutes, so to speak.

Then unwrap, place on a plate, and decorate as desired. Beautiful, hearty, aromatic and very tasty baked pork “Festive Accordion”, ready. I am sure that all relatives and friends will be delighted with this meat dish.

Take a good piece of meat, cut it into slices 7-10 cm thick. Cover with a plastic bag and beat on both sides. You can put a piece of meat inside the bag. Why are we doing this? Immediately place the chopped pieces of meat on a greased baking sheet. Salt and pepper to taste. Then cut the zucchini into small strips (you can grate it on a coarse grater), greens (optional), put them in a bowl. Pass the garlic through a press and immediately into a bowl with the zucchini and herbs. Add mayonnaise and mix. Cut the tomatoes into thin slices and grate the cheese on a fine grater.

Mix salt, sugar, mustard and, if available, saltpeter. Coat the meat well with this mixture and leave to marinate for 1 day at room temperature. Turn over periodically. Then we put it in the refrigerator for three to four days, where we also turn it over periodically. Before cooking, rinse the meat WELL, dry with a paper towel and rub with garlic. “Wrap” in dough and bake at 120 - 150 degrees for about 3-3.5 hours. 6. Merchant-style meat (with mushrooms) Products: In this case we used: - Pork (carbonate) - 4 pieces, - frozen mushrooms weighed - 150-200 g, - tomato - 1 piece, - cheese - 200-250 g, -mayonnaise, -salt, -spices - to taste. Description of preparation: 1. Beat the meat cut into pieces through the film and place on a greased baking sheet. Add salt and spices 2. Remove the skin from the tomato (after steaming it, you can do it in a double boiler for 3-5 minutes), cut into slices and place on the meat 3. Grate the cheese on a coarse grater. Place some of it on top of the meat and tomatoes (about 1/3). 4. Place the mushrooms on the cheese; you don’t need to defrost them first. Then pour mayonnaise (in very moderate quantities), salt and sprinkle with the remaining cheese. Place in the oven at 200 degrees for 20 minutes. If you use fresh champignons (chopped), then this dish looks neater - the mushrooms don’t stick out from under the cheese. 7. Baked meat with potatoes It’s quite simple to prepare this dish, there are, however, some tricks that make it especially tasty, for example, I always marinate the meat first in a whole piece - salt and pepper, if it’s lean meat I make cuts and put lard in the “pockets” with or without garlic, it’s to taste, coat it all with sour cream, preferably full-fat, and put it in the refrigerator for a day or at least 10-12 hours. I peel the potatoes, cut them and boil them in salted water with dill and onions, for no more than 5 minutes, it turns out half-raw, then I put the meat on a baking sheet, cover the meat from the sides so that the top is open and put it in the oven for 30-40 minutes ( depends on the size of the piece) after this time I take it out, straighten the foil and put the potatoes coated with sour cream next to the meat) and put them in the oven again until the potatoes are ready. ...the result is a very golden brown and crispy crust))) Bon appetit! 8. Veal roll There is nothing complicated in preparing this dish) So, you will need a piece of veal or pork (to taste), preferably not fatty, like carbonade. The meat should be salted and peppered, sprinkled with spices, coated with rich sour cream and refrigerated overnight, covered with a lid so as not to absorb foreign odors; ideally, at least 12-16 hours should pass) Remove the meat. Using a sharp cutting knife, manage to cut it so that you get a fairly thin layer. On this layer, place in layers ham, fried mushrooms (to taste, you can do without them) and a thin omelette previously made to your taste (here with herbs), already cooled. Roll the meat into a roll, secure it so that it does not fall apart with toothpicks and bake in a preheated oven for about one hour, the cooking time depends on the size of the piece. Fat-bellied PORK ROLLS with mushrooms and cheese Imagine steaming, crumbly potatoes emitting the smell of dill, on top of which lay thick-bellied, golden-crusted meat rolls... And amber trails of butter running down the potatoes from the rolls... Oof! In order for the mind to bear this spectacle, one must carefully prepare. So, let's get ready. The dish turns out so tasty and juicy that it is eaten immediately. Ingredients pork - 500 grams champignons - 500 grams onions - two pieces egg - one piece hard cheese - 100 grams mayonnaise - 100 grams salt - to taste ground black pepper - to taste vegetable oil - for lubrication Method of preparation: Wash the pork, dry it, cut into several pieces and beat. After this, rub the meat with salt and pepper. Wash the mushrooms and onions, peel the onions and cut everything into small cubes. Next, place in a frying pan well heated with vegetable oil and fry until the liquid evaporates. Season with salt and pepper. Separately, grate the cheese on a medium grater and mix with the egg. After this, lay out the pieces of meat, place the mushrooms and onions on top, then mix the cheese with the egg and wrap it in rolls. After this, tie the rolls with kitchen thread, place them on a baking sheet greased with vegetable oil and brush with mayonnaise. After this, add water and place in the oven. Bake in a preheated oven at 180-200 degrees until done. The pork rolls with mushrooms are ready - plump and golden. 10. Homemade ham I haven’t bought ham or prepared meat in stores for a long time. Especially after I once tried to fry a piece of boiled-smoked ham from one of the local producers. As a result, in the frying pan I ended up with a wrinkled, gray piece of something unknown in a nasty-smelling, bubbly liquid. Of course, I washed the frying pan, but the “sediment” remained. And since then, we only eat ham at home that we make ourselves. Moreover, there is nothing complicated in its preparation. There is a minimum of effort and ingredients, but the result exceeds all expectations. You will need: A smooth piece of ham - 1.5 kg Water - 1 liter. Salt - 110g. Spices - black, white, allspice, a couple of cloves, dried hot pepper. Preparation: Prepare the brine. Add salt and spices to a liter of clean water, put on fire and bring to a boil. Turn off the heat and cool completely. Now take a syringe and prick the meat with brine from all sides. This will not only allow the meat to be salted evenly, but will also allow you to practice and get used to it so you won’t be afraid to give injections to your family. When you give the injection, imagine that in front of you is just ham :). Place the chopped meat in a container, fill it with the remaining brine, press down with pressure and put it in a cold place for three days. Turn the meat once a day so that it is salted evenly and maintains an even color throughout the piece. We roll the salted ham more tightly and either tie it with twine or wrap it tightly in stretch film. And now begins the most “difficult” part of the process - cooking. In fact, it is not difficult, but simply requires periodic monitoring on your part. Heat the water to 85 degrees and put the ham in it. Reduce the heat and cook for about two hours, making sure that the water temperature is constantly around 78-80 degrees, not higher. This will give us a juicy and beautiful ham, “with a tear” on the cut. The easiest way to do this is not by eye, but of course with the help of a culinary thermometer. We take out the finished ham and wash it first with hot, then with cold water. Cool and place in the refrigerator overnight to allow the juices and salt to disperse inside the ham. If you cut a piece from a ham that is still warm, it may seem too salty, but the next morning, the “rested” ham will have a completely different taste. Such homemade ham is stored in the refrigerator for three or four days, since the only preservative it contains is salt, but usually it does not live to the end of its life, but is eaten much earlier.

From ground beef or pork you can prepare not only regular hot dishes, but also interesting snacks. This could be, for example, minced meatballs baked under a multi-colored, motley “coat” of vegetables with a delicate milk sauce - a tasty, aromatic dish for a family dinner or for any holiday. In addition, minced meat can serve as an excellent filling - not only for tasty, satisfying pancakes, but also for such an original dish as bagels stuffed with meat.

One of the simplest and yet truly festive options for minced meat snacks is baked stuffed tomatoes: the juicy pulp of tomatoes goes perfectly with hearty minced meat, cheese and delicate sour cream sauce. Such an unusual dish as Kaleidoscope zrazy with an unexpected “surprise” in the form of pasta filling will also require certain stuffing skills. The holiday menu can, for example, be diversified with an original Hispano meat recipe: hot, spicy pork baked in the oven with champignons, potatoes and aromatic spices will certainly be an excellent addition to the holiday menu. A slightly more complex, but truly spectacular recipe is pork in champagne, baked with vegetables and mushrooms (the original recipe calls for honey mushrooms, but you can use any other mushrooms, both fresh and frozen). And for cooking baked pork, it is better to use champagne that has expired - so that the dish can be prepared after the holidays, literally from “leftovers.” Men will certainly appreciate the juicy, hearty pork escalopes, fried to a delicious golden brown with salt and pepper.

Pork is a wonderful ingredient not only for hot dishes, but also for all kinds of holiday salads. A salad made from Swiss boiled pork or a salad with the telling name “Obzhorka” turns out to be very interesting and, moreover, not too greasy. Long before December 31, we are looking for, and, of course, putting together a menu for the New Year's table. After all, you really want to please both your family and friends. Housewives are tormented by the question: what to prepare for the New Year's table that is new and interesting? And the answer is found on the Internet.

The most important dish with which every housewife wants to surprise guests is a hot dish for the festive table made from meat, fish or poultry. Such a dish should not only be tasty, but also especially beautiful, after all, it’s a holiday. If the company is large and you are going to celebrate for a long time, then you can prepare several hot dishes.

In this collection, I decided to group interesting and tasty recipes for hot dishes for the holiday table for all tastes, to make it easier for housewives to choose. We will look at meat, fish and chicken dishes. All of them deserve attention and will surely decorate your holiday table.

This recipe is good because the meat can be boiled and prepared for baking 1-2 days in advance, then stored in the refrigerator and baked before guests arrive.

  • - back part of a pork carcass - ham with skin and bone - 3-5 kg
  • - Dijon mustard with grains - 2 tbsp. l.
  • - soy sauce - 2 tbsp. l.
  • - Worcestershire sauce - 2 tbsp. l.
  • - coriander seeds - 1 tbsp. l.
  • – cloves – 25-30 pcs.
  • - maple syrup (can be replaced with honey) - 200 ml.
  • – cinnamon stick – 1 pc.
  • – bay leaf – 4 pcs.
  • - black peppercorns - 1 tbsp. l.

We wash the ham well and place the whole meat in a large saucepan for cooking. Pour cold water on top, add a cinnamon stick, black pepper and bay leaf. After boiling, cook over moderate heat for 2 hours. We periodically check that the meat is completely covered with water, and if necessary, add hot boiled water. Don't forget to remove the foam.

Remove the meat from the broth. The broth can be used for soup, cooked in vegetable stew, or frozen. Now carefully separate the skin, leaving the fat layer.

Now, using a sharp knife, draw transverse lines along the fat to form diamonds. Insert a clove into the corners where the lines intersect.

This semi-finished product can be prepared in advance and stored in the refrigerator for up to 2 days.

Let's prepare the glaze. Mix maple syrup (honey), mustard, Worcestershire sauce and soy sauce.

Place the ham in a heat-resistant dish, coat it with a brush (use 1/2 of the glaze). Bake in the oven at 190°C for 15 minutes. Then coat with the remaining glaze again and bake for another 40 minutes. When baking, it is advisable to pour the resulting juice over the meat.

This beauty can be served either hot or cold.

Pork ham in the oven with cranberry syrup


The second, no less tasty, recipe for glazed ham, which is perfect for a holiday table, can be prepared with cranberry syrup.

For this dish we will need:

  • - pork ham - 2-2.5 kg.
  • – cranberries – 300 gr.
  • – canned apricots – 400 gr.
  • – brown sugar – 100 gr.
  • - port wine - 70 ml.
  • – bay leaf – 4 pcs.
  • – cloves – 20 pcs.
  • - peppercorns - 1 tsp.

Soak the ham in cold water for 6-8 hours, drain the water, and transfer the ham to a saucepan and fill with fresh water. Bring the water to a boil, drain again and fill with cold water again. Add bay leaf and pepper to the broth and cook over low heat for 30 minutes. Making cranberry glaze. To do this, cook the cranberries and sugar in 150 ml of water (about 5 minutes), remove the cranberries from the syrup, and cook the syrup for another 1 minute. Pour port wine into it.

The following procedure is the same as in the first recipe. Cut the skin off the ham. We make diamond-shaped grooves on the fat layer. We insert cloves into the intersections of the lines. Lubricate the ham with ½ syrup and bake in the oven at 190 ° C for 45 minutes. Brush with the remaining half of the syrup and bake for another 1 hour. When serving, garnish with cranberries, lettuce leaves or apricot halves.

Lamb baked in English with rosemary


Lamb is a valuable and nutritious meat, which contains 3 times less fat than pork and 4 times less cholesterol. Therefore, for those who do not want to gain extra pounds during the holidays, this recipe is suitable.

We will need:

  • - lamb - 1 kg.
  • – onions – 4 pcs.
  • - potatoes - 800 gr.
  • - tomato sauce - 3 tbsp. l.
  • – garlic – 3-4 cloves
  • - vegetable oil - 2-3 tbsp.
  • - salt, pepper, meat spices, rosemary
  • - greenery

Cut the meat into medium pieces and marinate - salt, pepper, sprinkle with spices, add a few sprigs of rosemary and leave for an hour.

Then everything is very simple - place the meat in a baking dish. On top we place potatoes cut into thin slices and onions cut into half rings. Salt and pepper. Finely chop the garlic and herbs and sprinkle on top.

Finally, pour the lamb with tomato sauce, slightly diluted with water. Bake in the oven at 180°C for about 2 hours.

Pork rolls with prunes

The rolls are easy and quick to prepare, and the dish turns out beautiful, New Year’s and tasty.


Ingredients:

  • – pitted prunes – 200 gr.

Soak the prunes in hot water for about 30 minutes, after which we drain the water and place the prunes on a paper napkin to dry.

Now put 2 pieces on the edge of each piece of meat. prunes and roll up. To keep them in shape, you can tie them with culinary thread, fasten them with a toothpick or a wooden stick.

In a preheated frying pan in vegetable oil, fry each piece on both sides until golden brown. Then place them on a baking sheet and bake in an oven preheated to 180°C for 15 minutes.

Cut the finished rolls crosswise into portions, place on lettuce leaves, and garnish with brightly colored vegetables.

Pork rolls with mushrooms and cheese

Rolls with mushrooms and cheese are no less tasty. Champignons fried with onions and also with the addition of cheese make the filling very tasty and juicy. These rolls can be prepared not only from pork; they are very tasty from chicken or turkey.

Ingredients:

  • - boneless pork, preferably soft neck - 1 kg.
  • – champignons – 400 gr.
  • - hard cheese - 200 gr.
  • — onions — 2 pcs.
  • – eggs – 4 pcs.
  • – potatoes – 6 pcs.
  • – parsley – 1 bunch
  • – wheat flour – 1 cup
  • - vegetable oil - 2 tbsp.
  • - salt, pepper and seasonings for meat

Cut the meat crosswise into pieces 7-8 mm thick. We beat each piece with a hammer on both sides. Salt, pepper and sprinkle the meat with seasonings (Provencal herbs work well).

Let's prepare the filling. Cut the onion into cubes. We clean the champignons and also cut them into cubes. Fry onions and mushrooms in a frying pan with vegetable oil. Cool the filling a little and add grated cheese and finely chopped herbs, salt and pepper.

Now put the filling on the edge of each piece of meat and roll it up. Beat the eggs. Dredge each piece in flour and immediately dip into the egg mixture.

Grate the potatoes on a coarse grater, drain the liquid. Cover the rolls with grated potatoes and immediately place them in a heated frying pan. Fry on all sides until golden brown.

Now place the fried pieces in a baking dish and bake in the oven at a temperature of 200 ° C for 15 - 20 minutes.

Meat with oranges in the oven

Well, this is a real holiday dish. Meat goes well with sweet fruits - oranges, pineapples, for example. The smell of citrus will add flavor to baked meat and a slight sweetness. Pork gets a special sweetish and original flavor from this proximity. And a delicious piece in the shape of an accordion will surely decorate your New Year's table.


Ingredients:

  • - boneless pork, preferably soft neck - 1 kg.
  • – oranges – 4 pcs.
  • – olive oil – 150 gr.
  • - salt, pepper and seasonings for meat

In this recipe, the meat must first be cut into portions and marinated. To do this, place the meat in pieces in a bowl, add salt, pepper, and sprinkle with seasonings. Squeeze the juice from 2 oranges, mix with half a portion of olive oil, pour this marinade over the meat and leave for 4 hours.

Now take each piece of meat out of the marinade, squeeze it a little and fry in a frying pan until golden brown on both sides.

Place the meat in a baking dish, place the piece vertically, and place oranges cut into slices between the meat. You can peel the oranges if you wish. Pour marinade over this beauty and bake in the oven at 190°C for 40 minutes.

If you don’t have any oranges at home, it doesn’t matter - this kind of meat with tomatoes is no less beautiful and tasty. Then, instead of orange juice, you can use dry red wine for the marinade.

Fish dishes

Many people prefer fish to meat because it is easier to digest by the body, healthier and less caloric. I offer several delicious and beautiful fish recipes that will decorate the New Year's and any holiday table.

Salmon in cream sauce with caviar

A very colorful dish that looks great on a festive New Year's table. Guests will certainly appreciate it. It’s not a real holiday without caviar, so I recommend this dish for your New Year’s table.


Ingredients:

  • - salmon (can be replaced with salmon) - 1 kg
  • - Provençal herbs spices
  • - vegetable oil
  • salt, pepper to taste

for the sauce:

  • - cream 20% - 200 ml.
  • - turmeric or curry powder - 2 tsp.
  • - parsley - 2 tsp.
  • - red caviar - 2 tbsp. l.

Cut the fish into portions. Salt, pepper, sprinkle with herbs. Place the fish in a baking dish.

Prepare cream sauce. Mix cream and chopped parsley. Add turmeric to the cream and stir well until smooth. Add caviar to the sauce.

Pour this sauce over the fish and place in a preheated oven. Bake at 200°C oven for 15 - 20 minutes.

Stuffed pike


A stunningly beautiful dish. Of course, it requires certain skills and labor, but the dish is worth it.

We will need:

  • – pike – about 1 kg
  • – white bread – 100 gr.
  • – milk – 1 glass
  • - egg - 1 pc.
  • - onions - 3 pcs.
  • - mayonnaise - 2 tbsp. l.
  • - greens - to taste
  • - salt pepper

We cut up the fish. We clean it, the carcass should remain intact, the fins should not be cut off. Cut off the head, remove the gills. Now the most difficult thing is to carefully remove the skin; to do this, carefully cut the meat in a circle with a sharp knife, trying not to damage the skin.

At the base of the tail, cut off the bone and remove the pulp. Separate the fish fillet from the bones.

Preparing the filling for the pike. Soak white bread in milk. We grind the fish fillet through a meat grinder (I grind it in a blender for speed). In a blender we also grind the onion and bread, add salt and pepper to taste, beat in 1 egg.

Mix all ingredients thoroughly until smooth.

Now very carefully stuff the pike with minced fish, trying not to damage the skin.

Place foil on a baking sheet, grease with vegetable oil and place the fish. Attach the head. Coat the fish with mayonnaise. Wrap the foil and bake in the oven for about an hour at 180°C.

Now decorate the pike and expect compliments from your guests.

Carp on an onion bed, baked in the oven

For this dish, a larger mirror carp is desirable. And don’t skimp on the onions, then you’ll get a delicious hot dish.


Ingredients:

  • – mirror carp – 2 kg
  • – onions – 5 heads
  • - mayonnaise - 2 tbsp. l.
  • - parsley and dill
  • - salt, black pepper
  • - ground ginger (basil, oregano) to taste
  • – egg – 1 pc.
  • - vegetable oil - 1 tbsp. l.

We clean the fish from scales, remove the gills and rinse thoroughly. Using a sharp knife, make several cuts along the back.

Cut the onion into thin rings and place it on a greased baking sheet. Sprinkle a little more oil on top.

Salt and pepper the carp and sprinkle with ground seasonings. Place the carp on an onion bed and grease the carcass with vegetable oil.

Lubricate the carp's belly from the inside with 2 tsp. mayonnaise, put bunches of dill and parsley inside. If desired, you can pour lemon juice on top of the fish.

Place the carp on a baking sheet and bake at 180°C for about 1 hour.

Beat the egg, add a little salt. Remove the carp from the oven and brush with ½ of the egg mixture. Then bake for another 10 minutes and brush again with the remaining mixture. When the carp is nicely browned, remove it from the oven, decorate the dish and surprise your guests.

Fish with mayonnaise, baked in the oven


Low-fat and even dry fish are suitable for such a dish; its taste will be wonderfully revealed under a pillow of cheese and vegetables.

We will need:

  • – fish – 1 kg.
  • – carrots – 2 pcs.
  • – onions – 2 pcs.
  • - cheese - 200 gr.
  • - mayonnaise - 150 gr.

Now we lay it in layers according to the principle of meat in French:

1st layer – place the fish in the mold

2nd layer – cut onion into half rings

3rd layer – three carrots on a coarse grater

4th layer - three cheeses, again on a coarse grater

And finally we coat it all with mayonnaise.

Place in an oven preheated to 190 ͦ C and bake for about 30 minutes. When you see an appetizing orange crust, the fish is ready.

Poultry dishes

Duck with apples

For a small group, duck with apples is a very tasty and festive dish. And it cooks much faster than goose. But keep in mind that there is not a lot of meat at the end. Consider the number of guests and if there are more than four, then buy two or more carcasses.

We will need:

  • – duck – 1 pc.
  • – apples – 3 – 4 pcs.
  • – lemon – 1 pc.
  • - sour cream - 80 gr.
  • - salt, pepper, poultry seasonings
  • - cinnamon to taste

First gut the duck, rinse and dry with a paper towel.

Rub the carcass with salt, pepper and seasonings.

Festive goose with apples

The goose is designed for a larger company, the average weight of a goose is 4-5 kg, and the cooking time increases accordingly. But it is necessary to marinate and prepare the goose for baking a day in advance.


We will need:

  • – goose – 1 pc.
  • – apples – 1 kg
  • – lemon – 1 pc.
  • – apricot jam – 100 gr.
  • - salt, pepper to taste
  • – garlic – 3-4 cloves
  • vegetable or corn oil – 50 ml.

Don't forget that goose takes a long time to bake, so start cooking it about 5-6 hours before your guests arrive.

The goose must first be gutted and rinsed with cool water. Prick the skin in several places with a needle. Now it is advisable to scald the goose with boiling water.

Rub the carcass with salt, pepper and garlic and put it in the refrigerator for a day.

Cut the apples into large slices and stuff the carcass with them.

To keep the goose in shape, we tie the legs and tie the goose with thread so as to tighten the wings.

Lubricate the carcass with vegetable oil.

If you find a large baking sleeve, it is best to bake in it. But if there is no sleeve, then you can cover the top of the carcass with foil.

Bake the bird at 200°C for about 1 hour, then lower the temperature to 160°C and bake for another 3 hours.

Mix apricot jam with the juice of half a lemon and the remaining oil, heat the mixture and, using a pastry brush, evenly coat the carcass. After this, put the bird in a still hot oven to rest for 10 minutes.

You can decorate the dish with lemon, canned apricots, and herbs.

New Year's turkey with oranges

In Europe, England and America, a very popular Christmas dish is baked turkey. The whole family is looking forward to this culinary miracle from the hostess. Let's try to please our loved ones.


We will need:

  • – turkey – (5-6 kg.)
  • – oranges – 3 pcs.
  • – apples – 2 pcs.
  • - onions - 1 pc.
  • – fresh or frozen lingonberries – 50 gr.
  • - chopped bacon - 150 gr.
  • - salt, pepper to taste
  • – garlic – 1 head
  • - rosemary, thyme - several sprigs
  • – butter – 250 gr.
  • - vegetable or olive oil - 1 tbsp. l.

First gut the turkey, rinse and dry with a paper towel. Salt and pepper.

Now we will prepare the oil for rubbing the turkey, which will make the dish juicy and fragrant. Salt and pepper butter at room temperature, add olive oil (although I prefer vegetable oil) and garlic pressed through a press. Squeeze the juice from one orange, grate the zest on a fine grater and also add to the oil. Add some herb leaves here.

Now lift the skin at the top of the breast and put some of the spiced oil into the resulting pocket. Do the same procedure with the lower part of the breast and legs. This should take half the oil. Rub the remaining half of the oil into the skin of the turkey. Top the carcass with salt and pepper and sprinkle with a little olive oil.

Wrap the turkey in foil and marinate in the refrigerator for at least 2 hours.

Cut the oranges, apples and onions into 4 parts, cut the head of garlic in half crosswise. Stuff the turkey with this, add more herbs rosemary and thyme. Place the bird in a baking dish and cover with foil.

Bake the bird at 220°C for about 30 minutes and pour over the resulting juice.

Place slices of bacon on the turkey breast, pour more juice over it and bake at 180° for about 3 hours, basting occasionally with juice. Serve with hot turkey gravy and lingonberries. If desired, you can prepare lingonberry sauce.

Chicken baked in a sleeve in the oven

The simplest and fastest dish for the holiday table is chicken baked in a sleeve. The result is a hearty, healthy and beautiful treat that even novice housewives can prepare.

We will need:

  • – chicken – 1 pc.
  • – prunes – 100 – 150 gr.
  • - dried apricots - 100-150 gr.
  • – garlic – 2-3 cloves
  • - salt, black pepper to taste

We will bake the whole chicken.

It needs to be marinated first. I recommend marinating a day in advance if possible. Then the chicken is soaked in seasonings and becomes especially soft and juicy.

Pour hot water over prunes and dried apricots for 10-15 minutes until softened. We stuff a whole chicken carcass with dried fruits.

We measure the required length of the sleeve, tie the sleeve with a knot on one side, put our chicken there, and secure the other end with a clothespin.

Bake for 40 minutes at a temperature of 180-190 ° C.

If you want to get a golden brown crust, 15 minutes before cooking, cut the top of the sleeve and bend the edge a little.
