When I woke up, I saw my beloved husband sitting in a chair next to me and ... reading a newspaper. At first, I didn’t immediately understand where I was and what happened, but when my thoughts cleared up, the first question was: “How is your son? Have you seen him? and three small zucchini,

100 grams of sour cream (although the recipe contained thick kefir of the same volume),

and a heaping teaspoon of salt (do not get carried away, the cheese itself is also salty),

I just had. So, I didn’t have to run to the nearest store for anything. So, without wasting any time, I immediately started cooking.
My zucchini, and right with the skin, rub on a coarse grater.

On it we rub our cheese,

and finely chop the cauliflower with a blender.

All these ingredients, including semolina, sour cream and salt, knead, and set aside for 15 minutes. Let the vegetables release the juice, the semolina will absorb it, and the mixture itself will become much more homogeneous both in taste and in consistency.

Mix well again. We set the oven to heat up at 190 degrees, and in the meantime we cover the baking sheet with parchment for baking,

and for 25 ... 35 minutes (more precisely - see for yourself) we set them to bake on the topmost shelf.
But I still have about half the base for zucchini and cauliflower pancakes. Therefore, I decided not to wait, but to fry the rest. So add two chicken eggs, mix well again,

and in a frying pan with heated vegetable oil, lay out the future pancakes. On medium heat, fry on one side for three ... five minutes,

then flip over and cook for another four minutes. We repeat.

And first of all, I managed to fry fritters from cauliflower and zucchini, first in a frying pan (although there were three batches of them),

and only then those that were cooked in the oven.

Although they differed little in taste and consistency, the option from the oven is much more dietary. But which one to prefer for you - decide for yourself.
