  • 150 grams of rye flour;

It is advisable not to add more flour, it is better to grease the table and hands with oil and try to knead a soft, slightly sticky dough. Divide into 12-14 pieces, which are rolled into balls and rolled out with a rolling pin into flat cakes 2 cm thick. Next, you need to heat the vegetable oil in a frying pan. Sprinkle each flatbread with 1 tsp. black sesame, distributing it evenly in a circle, and roll it out to a thickness of 1 cm with a rolling pin, pressing the grains into the dough. Fry in a frying pan until golden brown, turning with a spatula. Airy, light bhaturi is delicious even the next day, although it is usually eaten within the first half hour.

Indian flatbread chapati

This recipe (with photo) for flatbreads also comes from India. Chapati is a traditional everyday bread that is loved by vegans because it contains no animal products. They eat everything with it: from curry (rice with spices and vegetables) to sweet fruit fillings. And this is very convenient, because when baking, the dough is inflated, forming a “pocket” in which food is placed, and is wrapped into a roll, so you can eat it anywhere.

To prepare, boil a glass of water with 1 tsp. salt and, stirring vigorously, pour two cups of flour into it. Iranian flatbreads are baked in a dry frying pan, preferably covered, and the heat should be set to medium, as they bake almost instantly. It is convenient to wrap salads, meat dishes or sliced ​​cheese with spices in taftan and eat while still warm.

These Kazakh flatbreads made from yeast dough are prepared for major religious holidays, as well as funerals or weddings, and each clan has its own special way of preparing shelpek, which is passed on from generation to generation. At the same time, there is a recipe for flatbreads, which are a local type of bread:

Sift 500 grams of flour through a sieve and mix with 1/3 tsp. soda, quenched with vinegar, and the same amount of salt. Yeast dough is prepared from a glass of water mixed with 4 tbsp. l. kefir, sour cream or yogurt, 1 tbsp. l. sugar and the same amount of dry yeast. You should also add a pinch of salt. When the yeast is activated, add about 500 grams of flour or a little more, knead the dough and leave it warm for an hour to rise. Grate 300 grams of hard unsalted cheese and mix into the dough, then roll it out 1 cm thick and cut out circles with a saucer, brush each with beaten egg and sprinkle with ground coriander. Bake in the oven until done at 160 degrees and wrap hot in a cloth. Then they will become soft and retain freshness for a long time.

Moldavian placindas

These are cooked in a completely dry frying pan, which Moldavian shepherds took with them for lunch. Placindas are good because they do not go stale on the second or even third day. If you put them in the pan for half a minute, they become again as fragrant as the day they were cooked. The recipe for flatbreads is completely simple: unleavened dough is made from 1 glass of water, a pinch of salt and 500 grams of flour, with an additional 1-2 tbsp added to the dough. l. oils for elasticity.
