Maslenitsa is an ancient traditional holiday of the Slavs, which has come to us since pre-Christian times. Previously, however, it was celebrated much later, since it was with this holiday that people celebrated spring. But now Maslenitsa begins a week before the start of Lent, and, in fact, continues this week. So, in 2019, the holiday begins on March 4 and will last until March 10 inclusive.

Since ancient times, the custom of cooking pancakes, which symbolize the sun, has been preserved at this time. According to Christian canons, on Maslenitsa it is still allowed to eat dairy products and fish, but you can no longer eat meat.

Traditionally, they also prepared various flour products, fried, boiled, salted or smoked fish and put fish aspic on the table. Our editors have collected recipes that can be prepared this holiday, except for pancakes.

What to cook for Maslenitsa

Honey gingerbread

Maslenitsa Wednesday was called "Gourmand". Mothers-in-law especially prepared for this day, since then their sons-in-law came to them for pancakes. But besides them, their mothers-in-law often treated them to honey gingerbread.

Ingredients:

  • flour - 4 1/4 cups
  • sugar – 1 glass
  • butter – 140 grams
  • honey – 3 1/2 tbsp. spoons
  • water – 1/2 cup
  • soda – 1 teaspoon
  • baking powder – 1 teaspoon
  • salt – 1 teaspoon
  • cinnamon – 1 1/2 teaspoons
  • ground ginger – 1/2 teaspoon
  • cloves – 1/2 teaspoon
  • egg white – 1 piece
  • powdered sugar – 1 1/2 cups
  • lemon juice – 1 tbsp. spoon

Recipe:

Mix sugar, honey and water in a saucepan. Place over medium heat and wait until the sugar dissolves, stirring occasionally. Then add oil and spices - cinnamon, ginger, cloves. Remove from heat when butter has melted, then whisk together flour, baking soda and baking powder in a large bowl. Next, pour a warm mixture of spices, sugar and butter into the flour. Stir and knead the dough, from which you then form a ball, wrap it with cling film and put it in the refrigerator overnight. The next day, you can make gingerbread cookies from the finished dough. Remove the dough from the refrigerator and preheat the oven to 200 degrees. Roll out the dough after it has reached room temperature and cut out the gingerbread cookies using a special mold or knife. The cut-out gingerbread cookies can be placed in the oven after covering a baking sheet with parchment paper. They bake quite quickly - 5-6 minutes is enough for you!

Beat egg whites, powdered sugar and lemon juice until smooth. Place the mixture in a bag and cut off the tip at the end. Paint the gingerbread cookies with glaze and wait until it hardens.

Honey gingerbread

This is an ancient East Slavic drink made from water, honey and spices, which often included medicinal herbal mixtures. It can be both alcoholic and non-alcoholic, and has completely different variations - spicy, intoxicating, winter, molasses and the like. Let's talk about one of them - winter sbitna.

Ingredients:

  • water – 4 glasses
  • sugar – 0.5 cups
  • honey – 5 tbsp. spoons
  • cloves – 1 pc.
  • cinnamon – 1 pc.
  • bay leaf – 1 pc.
  • cardamom – 2–3 pcs.

Recipe:

Pour 4 cups of water into a saucepan, put on fire and bring to a boil. Then add half a glass of sugar, 5 tablespoons of honey and various spices (cloves, cinnamon, bay leaf, cardamom) to boiling water. Boil for 10-15 minutes. Strain. Serve hot in a jug.

Dough figures

You can also pamper yourself with seven different figures made from butter dough: larks, doves and swallows. It was customary to prepare such products especially on Thursday - “Razgulay”, as it was called.

Ingredients:

  • flour – 3 tbsp. l. for dough and 3 cups for dough
  • milk – 250 ml
  • dry yeast – 30 g
  • powdered sugar – 1 tbsp. for dough and 100 g for baking
  • chicken eggs – 2 pcs.
  • sunflower oil – 1 tbsp.
  • salt - a pinch
  • butter – 120 g

Recipe:

First, prepare the dough: add powdered sugar, yeast, flour to warm milk (35-40°C) and stir until all products are completely dissolved. Leave the dough for half an hour. After this time, you will get a lush “cap”, which will later fall off, and bubbles will appear on the surface - the dough is ripe.

In a separate bowl, mix the baking: soft butter, eggs, sugar. Combine and mix: dough, baking and flour until the dough becomes elastic and smooth. Form the rich yeast dough into a lump, place it in a pan, cover with a clean towel and leave for 1-2 hours until the dough rises. Then knead the dough and form figures from it and place on a baking sheet greased with oil. Bake the pastry for 40 minutes at 180 degrees. After 20 minutes, brush the product with beaten egg yolk.

Jerk off or Drachenka

This dish is prepared from flour, eggs and milk. In some cases, jerking off is very similar to an omelette, in others it is more rigid - like baked cakes. The masturbation also had a ritual meaning: on the days of the funeral they went to the cemetery with it.

Ingredients:

  • flour – 1.5 cl.
  • yolks – 10 pcs.
  • squirrels – 5 pcs.
  • heavy cream – 1 cl.
  • butter – 1 tbsp.
  • salt – 1 tsp.
  • powdered sugar – 3 tbsp.

Recipe:

Grind the yolks with powdered sugar until white, gradually pour the cream into the mixture and stir until a homogeneous mass is formed. Gradually add flour and knead the dough. Add salt and beat well. Separately, beat the whites with a pinch of salt until stiff foam. Gently add to the dough, stirring from top to bottom.

Pour into a greased mold or deep frying pan and place in a hot oven for 15-20 minutes.

According to custom, on Saturday there are “sister-in-law’s get-togethers,” or rather, on Saturday evening the table was laden with flour dishes: dumplings with cherries, kurniks and a variety of pies. By the way, the ritual of burning the effigy took place at the same time. People believed that fire had magical powers and cleansed a person of all bad things. Kurnik is also called the royal pie, the king of pies and the festive one. Although in Christianity it is not customary to eat meat during this period, but if you do not follow these rules, you can try cooking it.

Ingredients:

  • butter (preferably homemade) – 100 g
  • sour cream – 110 g
  • soda – 0.5 tsp.
  • salt - a pinch
  • flour – 2 cups
  • meat – 500 g
  • potatoes – 2 pcs.
  • onion – 1 pc.
  • eggs – 1 pc.

Recipe:

Melt the butter and cool. Add sour cream, salt, soda and beat in the egg. Mix everything. Knead a light dough. To do this, sift the flour and add the sour cream and butter mixture. Cover the dough with cling film and leave for an hour. Meanwhile, prepare the filling. Chop the meat, potatoes and onions very finely with a sharp knife, add salt and pepper. Stir.

Divide the dough into two parts in the following proportions: 2/3 and 1/3. Roll out most of it to a thickness of 5 mm and place on a baking sheet lined with parchment. Stepping back 5 cm from the edges, distribute the filling evenly. Roll out the second part of the dough and place it on top. Seal the edges and use a knife to make cuts in the center to allow steam to escape. Brush the chicken with beaten egg and place in the oven for 40 minutes at 180 degrees.

This is an incredibly tasty dish. It can be served either cold or hot. According to the proposed recipe, frozen puff pastry is quite suitable for making fish pie, so it can be prepared quite easily and quickly.

Ingredients:

  • lightly salted salmon or trout – 300 – 400 m
  • yeast puff pastry
  • eggs – 4 pcs.
  • green onions – 1 bunch
  • rice – 1 cup

Recipe:

First, cook the rice in advance so that it has time to cool. Line a pie pan with baking paper and grate with butter. Then roll out two sheets of dough. Place one sheet on the bottom of the mold. Peel and bone the fish and cut into small pieces. After this, boil the eggs hard and chop the onion.

Now layer the pie filling on the base: a layer of rice, then onions and eggs. The last one is the fish layer. Cover the top with the other half of the dough. Pinch the pie dough around the edges, spread the top of the pie with butter and sprinkle with sugar. To allow steam to escape, make several holes with a knife. You can place the pie in an oven preheated to 180 degrees for 40 minutes.

Kaymak

Kaymak is rarely found on store shelves. This is a dairy product. The tender, sweet or salty mass is a cross between cottage cheese, sour cream and butter.

Ingredients:

  • cream – 3 tbsp.
  • sugar – 1 tbsp.
  • vanilla sugar (natural) – ¼ sachet
  • lemon – 1 pc.

Recipe:

Combine two glasses of cream with sugar and vanilla sugar and cook over low heat until tender (a drop dropped into cold water should thicken to the consistency of sour cream). When cooking kaymak, make sure that it does not burn.

Cool the finished kaymak quickly (place the vessel in cold water), then beat with a spatula, adding lemon juice drop by drop. When the kaymak becomes thick and white, carefully add cream to it. Mix the mixture well and put it in the refrigerator. Kaymak can be served separately or added as a layer for waffles or cake.

Varenets

This is a fermented milk drink, prepared from baked cow's milk (ryazhenka), using sour cream as a starter.

Ingredients:

  • milk – 1 l
  • cream – 250 ml
  • sour cream – ½ tbsp.
  • yolk – 1 pc.
  • sugar – 1 tbsp.

Recipe:

Mix milk and cream in a saucepan and place in the oven. As soon as peaks appear on the surface, lower them to the bottom with a spoon and shake. Place one peak on a plate. Continue baking the milk until it has reduced by one third. Remove the baked milk from the oven and cool to 40°C.

Add sour cream mixed with yolk and sugar, whisk, pour into cups and place a piece of foam on top. Place in a warm place (30-40°C) until the Varenets turns sour. Then put it in the refrigerator. Serve Varenets with sugar, cinnamon and crackers.

Cheesecakes "Kievskie"

Maslenitsa is also sometimes called Cheese Week. On this holiday, various dishes were prepared from cottage cheese, in particular cheesecakes.

Ingredients:

  • homemade cheese – 500 g,
  • flour - ¾ tbsp.
  • eggs – 3 pcs.
  • sugar – 3-4 tbsp.
  • jam – 2-3 tbsp.
  • raisins – 2 tbsp.
  • white crackers – 50 g
  • butter – 100 g
  • powdered sugar – 1 tbsp.
  • sour cream 20% fat – ½ glass.
  • salt to taste

Recipe:

Rub the cottage cheese through a sieve, mix with sugar, two eggs, salt and flour and stir until smooth. Sort the raisins, rinse and dry. Boil raisins with jam until thick and cool. Divide the curd mass into pieces, roll it into round flat cakes 5-7 mm thick, add the cooked jam and make oval-shaped cheesecakes. Soak each cheesecake in a scrambled egg, bread it in breadcrumbs and fry in plenty of oil. When serving, sprinkle with powdered sugar. Serve sour cream separately.

Maslenitsa is an ancient Slavic holiday, the roots of which go so far into the past that no one knows exactly when it appeared. Many researchers believe that in ancient times Maslenitsa was celebrated later - it symbolized the end of winter and the beginning of the fertile season. Actually, this is what the festivities were timed to coincide with. But over time, the Orthodox Church streamlined this issue in its own way, and the dates for celebrating Maslenitsa began to depend on the date for celebrating Easter. Today, Maslenitsa is celebrated in the last week before the start of Lent, and the end of this fast is precisely the holiday of the spring equinox - Easter.

Maslenitsa is celebrated for a week, and each day has its own special scenario - meeting, flirting, delicacy, revelry, mother-in-law's parties, sister-in-law's get-togethers, farewell. The first three days are called Narrow Maslenitsa, the rest - Broad. The culmination of the celebration, as we know, is the burning of an effigy of winter, which symbolizes its imminent end. It often happens that it symbolizes prematurely.

In general, various winter activities are held on Maslenitsa - sliding downhill, storming a snow fortress, sled riding, wrestling in the snow. But once upon a time, matchmaking and memorials for the deceased were also scheduled on these days. Everything had to be done before the start of Lent. By the way, despite all the revelry, Maslenitsa is also called Cheese Week. And by cheese here we mean cottage cheese and dairy products. The fact is that you can no longer eat meat on Maslenitsa - preparations are underway for fasting. Only fish, pastries and dairy products can be on the table. The last day when you can eat meat is the so-called Meat Sunday, that is, the last Sunday before Maslenitsa.

But let's finish with the theoretical part and get to the point. As we already understood, people do not eat meat on Maslenitsa. The main symbol of this holiday is, of course, pancakes, of which there are countless numbers - wheat, buckwheat, semolina, yeast, sourdough, custard, with seasoning, and so on and so forth. But everyone already knows about pancakes, and we’ll try to figure out what else is customary to cook for Maslenitsa, besides pancakes.

Here you need to understand that the holiday lasts a week, and it’s difficult to eat pancakes for a week. Therefore, on these days they traditionally prepared lean cabbage soup with sauerkraut and finished off the various prepared preparations. This is such an everyday food. Also, various fish dishes such as jellied or baked fish are perfect for this holiday. Dumplings with potatoes or cottage cheese and potato pancakes would be appropriate on the table. Well, and, of course, various pastries - without them there would be no holiday.

Syrniki

This quick cottage cheese dish is included in the national cuisine of many Slavic peoples, and Cheese Week is the perfect time for it.
  • cottage cheese - 500 g;
  • flour - 2 tbsp. l.;
  • eggs - 2-3 pcs.;
  • sugar - 3-4 tbsp. l.;
  • jam - 2-3 tbsp. l.
  • raisins - 2 tbsp. l.;
  • white crackers - 50 g;
  • butter - 100 g;
  • powdered sugar/vanilla sugar - 1 tbsp. l.;
  • salt - to taste.

Rub the cottage cheese through a sieve, mix with sugar, 2 eggs, salt and flour and mix until smooth. Sort the raisins, rinse and dry. Boil raisins with jam until thickened and cool. This ancient fermented milk drink was once a very frequent guest on the holiday table. Now it is a little forgotten, but there is a good reason to remember it.

  • milk - 1 l;
  • cream - 250 ml;
  • sour cream - half a glass;
  • yolk - 1 pc.;
  • sugar - 1 tbsp. l.

Mix milk and cream in a saucepan and place in the oven. As soon as foam appears on the surface, lower it to the bottom with a spoon and shake. Place one foam on a plate. Continue boiling the milk until it is reduced by one third. Remove the boiled milk from the oven and cool to 40°C.

Add sour cream mixed with yolk and sugar, whisk, pour into cups and place a piece of foam on top. Place in a warm place (30-40°C) until the Varenets turns sour. Then put it in the refrigerator. Serve the finished Varenets with sugar, cinnamon and crackers.

Another winter drink that will warm you up in the cold and give you many pleasant moments.

  • sugar - 150 g;
  • honey - 200 g;
  • cloves - 5 buds;
  • cinnamon - 2 g;
  • ground ginger - 2 tsp;
  • black pepper - 10 peas;
  • karmadon - 6-8 capsules;
  • star anise - 3 stars;
  • boiling water - 5-6 l.

Dissolve sugar and honey in boiling water (you can add it later, to a liquid cooled to 40 degrees - so it will not lose its beneficial qualities) and cook for 15 minutes; add all the spices and cook for another 10 minutes; then pour it hot and drink it like tea.

Cheesecake "Tsarskaya"

Well, where would Maslenitsa be without baking? Cheesecake is another version of a dough product symbolizing the sun. It's easy to do and brings a lot of joy.

  • low-fat cottage cheese - 500 g;
  • eggs - 5 pcs.;
  • sugar - 5-7 tbsp.
  • butter - 200 g;
  • flour - 1.5 cups;
  • salt - to taste.

Grind the egg yolks with sugar until white, beat the whites with a pinch of salt until stiff peaks form. Rub the cottage cheese through a sieve for a finer structure. Combine the yolks with cottage cheese, mix, add the whites and beat with a mixer until fluffy. Grate the frozen butter on a coarse grater, mix with flour and grind until it becomes coarse.

Pour half of the flour mixture into the bottom of the mold, add the cottage cheese and cover with the remaining crumbs. Place in an oven preheated to 180°C and bake until done.

Drachena

Here is another interesting dish, similar to an omelette. Among other things, drachena once had a ritual meaning - on the days of funerals they went to the cemetery with it.

  • eggs - 4-5 pcs.;
  • sugar - 2 tbsp. l.;
  • cream - 1 glass;
  • flour - 1 glass;
  • butter - 1-1.5 tbsp. l.;
  • powdered sugar - 1 tbsp. l.

Beat eggs with sugar until foamy, add cream, add flour, mix quickly and pour into melted butter in a deep frying pan, bake in a heated oven until the drachena browns and rises well. Serve hot, sprinkled with powdered sugar.

For some, Maslenitsa is associated with mass cheerful festivities, some see it as preparation before Lent, others remember the famous cartoon by Robert Sahakyan: “Look, you, Maslenitsa.” All these versions will be true and correct, because Maslenitsa is a multifaceted holiday that contains a large number of symbols and meanings. But still, what is Maslenitsa, and how is it celebrated?

How is it traditionally celebrated and what is prepared for Maslenitsa?

Maslenitsa is an ancient Slavic holiday, which, according to history, has always been the longest of the year. The origin of Maslenitsa goes back a long way, and is made up of scraps of chronicles and letters. From them it is clear that the holiday originated from pagan culture, which survived after the adoption of Christianity, and became the threshold of Lent before Easter.

What date is Maslenitsa celebrated? It is celebrated differently every year! For example, in 2016 it is celebrated from March 7 to 13. And in 2015 it was celebrated from February 16 to 22.


After the adoption of Christianity, the last week before the upcoming Lent in the Orthodox church calendar began to be called “Cheese Week.” The meaning of Cheese Week is forgiveness of grievances, reconciliation of neighbors, and preparation before Lent. This time should be spent having fun, because... There are 7 weeks of strict restrictions ahead. Each day of a given week has certain interesting customs and features.


According to Christian canons, on Maslenitsa it is still allowed to consume dairy products (milk, kefir, cheese, cottage cheese and eggs), fish dishes are allowed, but meat is no longer allowed. An indispensable attribute of Maslenitsa - pancakes, which had ritual significance - were a symbol of the sun. They were usually baked from buckwheat, rye or wheat flour. Various seasonings and sauces were served with them.

The presence of a lot of fatty food and strong drinks at ceremonial feasts was typical. In addition to pancakes, a variety of flour products were traditionally prepared: pancakes, yarn, flat cakes, potato pancakes, brushwood and all kinds of pies. Maslenitsa feasts were also distinguished by a large abundance of fish dishes: fried and stewed crucian carp and carp, salted and smoked herring and jellied fish. But the main signature dish of this holiday is still pancakes, which we are used to preparing according to our favorite recipe. Well, Maslenitsa is a great opportunity to experiment and learn new amazing pancake recipes, because they can be not only sweet, but also vegetable, meat and fish.

Pancake flour: variety of types


Usually we are used to baking pancakes from wheat flour. However, there are other types: rye, oat, rice, buckwheat, pea and corn flour.
  • Wheat flour is obtained by grinding food grains and is the main raw material of the confectionery, baking and pasta industries.
  • Rye flour does not form gluten, but it contains more active enzymes that break down starch. Some properties predominate in it, much more than in wheat flour, for example, iron by 30%, and magnesium and potassium by 1.5–2 times.
  • Buckwheat flour is good for allergy sufferers, but is not suitable for pancakes due to the lack of stickiness. Therefore, buckwheat pancakes are baked only in the company of wheat flour, otherwise they will simply fall apart.
  • Pancakes made from rice flour are a very capricious product; they do not turn out thin and transparent and will also fall apart. Therefore, it is preferable to buy them ready-made.
  • Corn flour can only be combined with wheat flour, and only if it is very finely ground.
  • Oatmeal is great for pancakes, especially when combined with oat bran. Then the pancakes turn out to be dietary and have a beautiful small brown dot.
  • Pea flour makes thin and crispy Indian style pancakes. It can glue anything together, so you don’t even need to add eggs to the dough.

We will not deviate from the habits of our ancestors, and we will tell you how they traditionally walked and what they prepared for Maslenitsa.

Monday - “meeting”

The first day of Maslenitsa begins on Monday. From old clothes, straw and other improvised materials, they made a stuffed animal of a fat and large woman, impaled it on a stake and installed it in the main square. Women, putting aside household chores, went to the tavern to drink a glass, have fun, and talk about life. If men wanted to join them, then “pads” (small planks tied with a long ribbon) were placed around their necks. They could only be removed by exposing the Magarych to the young ladies.

Also on Monday, all families began to bake pancakes, and the first baked pancake was given to a beggar, poor and needy person, so that he could remember the souls of deceased relatives and loved ones. All people invited friends and relatives to visit to taste pancakes. But the father-in-law and mother-in-law sent their daughter-in-law to her mother and father in the morning so that in the evening they could come and visit the matchmakers. Pancakes with milk: recipe


Ingredients:
  • Wheat flour - 220 g
  • Milk - 2 cups (400 ml)
  • Powdered sugar - 2 tbsp.
  • Eggs - 1 pc.
  • Salt - a pinch
  • Vegetable or melted butter - 2.5 tbsp.
Making pancakes with milk:
  1. Mix warm milk with powdered sugar and salt.
  2. Beat the eggs with a whisk.
  3. Sift the wheat flour into another container and pour in the beaten eggs. Mix well.
  4. Add milk and knead into a homogeneous dough.
  5. Pour in the oil and stir.
  6. Heat the frying pan well, grease it with vegetable oil and pour a portion of dough onto it (one ladle), which is distributed in a thin layer throughout the frying pan in a circular motion.
  7. Bake the pancakes on both sides until sunny.

Yeast pancakes: recipe


Ingredients:
  • Flour - 300 g
  • Dry instant yeast - 11 g
  • Milk - 300 ml
  • Sugar - 60 g
  • Salt - a pinch
  • Water - 200 ml
  • Eggs - 2-3 pcs.
  • Sunflower or olive oil - 100 ml
Preparation:
  1. Combine eggs, sugar, salt and beat everything thoroughly.
  2. Add the remaining ingredients (sunflower oil, milk, yeast, flour, water) and mix until smooth.
  3. Place the dough in a place without drafts for one hour.
  4. When the dough has doubled in volume, stir it to release the air. Leave the dough to rise again. (!) Don't interfere.
  5. Heat the frying pan and use a pastry brush to lightly coat the bottom with oil.

On Thursday, all housework was stopped, sewing and spinning were especially forbidden, and a wide celebration began. People walked, had fun, fought fist fights, rode horses, organized competitions, which were accompanied by eating all kinds of dishes and eating pancakes. Even on Thursday evening, the son-in-law should go to his mother-in-law, bow from the waist and invite her to his home for a pancake dinner the next day. On Thursday, a wild day, it is customary to bake figures from butter dough that are harbingers of spring: larks, doves and swallows.

  • Flour - 3 tbsp. l. for dough and 3 cups for dough
  • Milk - 250 ml
  • Dry yeast - 30 g
  • Powdered sugar - 1 tbsp. for dough and 100 g for baking

  • Vegetable oil - 1 tbsp.
  • Salt - a pinch
  • Butter - 120 g
Preparation:
  1. Prepare the dough. Place 1 tbsp in warm milk (35–40 °C). powdered sugar, yeast, 3 tbsp. flour and stir until all products are dissolved. Leave the dough for half an hour. After this time, you will get a lush “cap”, which will later fall off, and bubbles will appear on the surface - the dough is ripe.
  2. In a separate bowl, mix the baking: soft butter, eggs, sugar.
  3. Combine and mix: dough, baking and flour until the dough becomes elastic and smooth.
  4. Form the rich yeast dough into a ball, place it in a pan, cover with a clean towel and leave in the kitchen cabinet for 1-2 hours. After this time the dough will rise well.
  5. Punch down the dough and form figures from it, which are placed on a baking sheet coated with oil. Bake the pastry in the oven for 40 minutes at 180 degrees. After 20 minutes, brush the product with beaten egg yolk.

According to old beliefs, fire had magical powers and cleansed a person of negativity and sorrow. On Saturday evening, the Maslenitsa table should be bursting with an abundance of flour dishes: dumplings with cherries, chicken chicken and various pies.


Cherries for dumplings can be used fresh, frozen or canned. Dumplings are steamed or boiled in water.

  • Soda - 0.5 tsp.
  • Salt - a pinch

  • Potatoes - 2 pcs.
  • Onion - 1 pc.
  • Eggs - 1 pc.
Step-by-step preparation of chicken:
  1. Melt the butter and cool. Add sour cream, salt, soda and beat in the egg. Mix everything.
  2. Sift the flour, add the sour cream and butter mixture and knead a light dough, cover with cling film and leave for 1 hour.
  3. Meanwhile, prepare the filling. Chop the meat, potatoes and onions very finely with a sharp knife, add salt and pepper. Stir.
  4. Divide the dough into two parts in the following proportions: 2/3 and 1/3.

Sunday - “Forgiveness Sunday” - “farewell to Maslenitsa”

The last day of Cheese Week is called Forgiveness Sunday or farewell to Maslenitsa. On Sunday, the most magnificent and massive festivities, fun and games were held. We went around to all relatives and friends, asking them for forgiveness for the grievances they had caused, so that we could begin the next day of Lent with peace in our souls. When meeting people, one had to bow three times, asking for mutual forgiveness, and kiss three times as a sign of reconciliation.

On the last Sunday of Great Maslenitsa, it is customary to eat your fill of any delicacies, because... after it comes Strict Great Lent. In the evening, at the large table, the family gathered together again, where the main dish was pancakes, pancakes with cottage cheese, potato pancakes and pies with cabbage. And after dinner they did another interesting ritual - they rinsed their teeth. There was an opinion that if this is not done at the end of Maslenitsa, then the devils will pull out the cottage cheese that remains in them along with their teeth.

Tuesday - Flirting. A day full of troubles for unmarried girls. On this day, the guys walked around the village to visit the girls, ate pancakes and looked at potential brides. So the girls cooked pancakes and pancakes, with cottage cheese, poppy seeds, butter and honey and other goodies. Preparation:
Heat the milk to 40°C, stir sugar and yeast in it, leave to rise for 10 minutes. Pour melted butter and salt into the beaten yeast, add sifted flour and knead into a smooth dough. Place it in a warm place and let it rise. The dough should double in size. Punch down, let rise again and divide into 16 parts. Place the resulting buns on a parchment-lined baking sheet and let rise. For the filling, rub the cottage cheese through a sieve and mix with the remaining ingredients. If it's not very sweet, add sugar. Use a glass to press indentations in the center of each bun to create something like a basket. Brush the edges of the baskets with yolk mixed with milk and fill with cottage cheese. Place the cheesecakes in the oven preheated to 200°C for 20-30 minutes. Place a frying pan with water on the bottom to prevent the cheesecakes from burning.

Wednesday - Gourmand. Rich tables were laid in all houses. And it was a busy time for mothers-in-law, because on this day they had to treat their son-in-law, and not just bake pancakes, but arrange a real pancake feast! All kinds of pancakes were baked for the beloved son-in-law: large and small, yeast and milk, with caviar and herring, with jam and honey... And numerous tents with all kinds of food were set up on the streets. They sold roasted nuts, honey gingerbread, and sbitni.

Ingredients:

50 g honey,

Preparation:
Cut the tomatoes into slices and cook them in a little water until tender. Rub the tomato mass through a sieve, add salt, pour in milk, scrambled eggs and stir. Add enough flour to make a dough as thick as sour cream. Bake the pancakes, fold them in half, sprinkle with chopped herbs and grated cheese.

Thursday - Take a walk. It was on this day that the famous fist fights, the capture of specially built snow forts, horse riding, racing down ice slides and competitions for the best pancake in the entire village were held. Do you remember the famous paintings “The Capture of the Snowy Town” and “Maslenitsa” or scenes from the film “The Barber of Siberia”? On Thursday, the so-called wide Maslenitsa began, when household chores stopped and unbridled fun began. On this day, not only pancakes are baked, but also larks, doves and swallows - the harbingers of spring. In the evening, the children gathered outside the outskirts to call the sun so that it would quickly bring spring.

Preparation:

The dough should be quite liquid. Bake the pancakes on both sides. Cut the red fish into thin slices. Place fish slices and a piece of butter in the middle of each pancake.

3-3.5 cups of flour,
15 g pressed yeast,
2 tbsp. Sahara,
½ tsp. salt,
¼ cup melted butter,
strong sweet tea - for coating.

Preparation:
Dissolve yeast, sugar and salt in warm milk and stir. leave for 10-15 minutes to ferment. Gradually add flour to the yeast and knead the dough. At the very end of kneading, add melted butter and knead into a smooth dough that will not stick to your hands. Place in a warm place, covered with a napkin. When the dough has doubled in size, knead it and let it rise again. Then divide the dough into 16 parts and roll the dough pieces into ropes. Tie the flagella into a knot, flatten the tail and make several cuts on it, pull out the nose and insert eyes (raisins or buckwheat). Place the doves on a baking tray lined with baking paper, leave to rest, brush with strong sweet tea and bake at 180°C for 20-25 minutes.

Moreover, the mother-in-law the day before had to send her son-in-law a tub for kneading dough, a frying pan and even a ladle. And my father-in-law sent me a bag of flour. And here it was impossible to lose face! The son-in-law had to bake pancakes himself and treat his mother-in-law and father-in-law.

Saturday - Sister-in-law's gatherings (Farewell). On Saturday, the young daughter-in-law invited her husband's sisters to her place. If they were unmarried, the daughter-in-law invited her unmarried friends. If the sisters-in-law were already married, then all the married girlfriends were invited and the whole train went to visit. It was customary to give gifts to sisters-in-law and, of course, treat them to delicious pancakes, pies or baked fish.



Ingredients:

300 g fish fillet,
1 onion,
1 stack kefir,
3 tbsp. flour,
1 egg,
salt, ground black pepper, seasonings - to taste.

Preparation:
Pass the fish fillet along with the onion through a meat grinder 2 times or grind in a blender. Mix with kefir, beaten egg and flour, season to taste. The dough should look like pancakes. If necessary, add kefir. Bake the pancakes in a hot frying pan with vegetable oil until golden brown.

Ingredients:
200 ml milk,
125 g flour,
4 eggs,
2 tbsp. Sahara,
2 tsp starch,
2 tbsp. nuts,
2 tbsp. melted butter,
1 tsp powdered sugar,
1 pack of frozen cherries,
cinnamon, salt, ground allspice - to taste.

Preparation:
Separate the yolks from the whites and knead them with flour, milk and a pinch of salt. Cover with a napkin and leave in a warm place to swell. Place the cherries in a saucepan, pour in 2 cups. water and boil with sugar, cinnamon and allspice. Dissolve the starch in a small amount of water and add to the cherry compote. Boil for 5 minutes and remove from heat. Finely chop the nuts. Beat the whites into a fluffy foam, combine with nuts and add to the dough. Bake the pancakes in a frying pan with melted butter. Serve with cherry dessert and powdered sugar.

Ingredients:
5-6 stacks. flour,

½ cup milk,
½ cup water,
½ tsp. salt.
Filling:
800 g frozen cherries,
½ cup Sahara,
3 tbsp. decoys.

Preparation:

Roll out the dough thinly, cut out circles using a notch, place a teaspoon of filling in the center and pinch the edges. Boil the dumplings in boiling salted water. Serve with butter or sour cream.

Sunday - Forgiveness Sunday. The culmination of the holiday is the burning of the effigy of Winter. On this day, everyone asks each other for forgiveness for grievances caused, whether willingly or unwillingly. This is a kind of rite of repentance and cleansing before Lent. Even strangers hugged and asked each other for forgiveness. Sunday is the last day of holiday treats, on which it was customary to eat to your heart's content. At the end of the day, the bathhouse was heated, and then everything that was left from the Maslenitsa festivities was burned. The ashes were scattered in the field - for a good harvest, so that there would be something to bake pancakes from next year.

Ingredients:
14-16 pcs. any savory pancakes,
100-150 g chicken meat,
200 ml sour cream,
200 g mushrooms,
1 onion,
4 eggs,
50 g hard cheese,
salt, pepper, dill - to taste.

Preparation:
Cut the chicken into pieces and fry along with half the chopped onion. Salt, pepper, add 1 tbsp. sour cream and simmer for 10-15 minutes. Separately, fry the mushrooms with the remaining onions. Boil the eggs, chop and combine with chopped dill. Place 3-5 pancakes in the pan so that they cover the bottom and sides of the pan and hang out. Place a pancake on the bottom, brush with sour cream and add mushrooms. Cover with 1-2 pancakes and add chicken. Place 1-2 pancakes again, press lightly, brush with sour cream and add eggs. Place 1-2 pancakes on top. Fold the edges of the overhanging pancakes and sprinkle grated cheese on top. Place in an oven preheated to 180°C for 20-25 minutes.

Ingredients:
200-250 g of mushrooms (champignons, oyster mushrooms, etc.),
1 onion,
5-6 tbsp. butter,
2-3 tbsp. sour cream,
7-8 eggs,
½-⅓ cup. milk,
40 g cheese,
parsley, pepper, salt - to taste.

Preparation:
Boil the mushrooms until half cooked, chop finely and simmer with chopped onion and 1 tbsp. oils At the end of stewing, add salt, pepper and sour cream. The filling should be quite thick. Beat eggs with milk, add finely chopped parsley and salt. Divide the egg mixture into 3 parts and fry 3 omelettes. Place the omelets in a frying pan, topping them with mushroom filling to form a cake. Sprinkle the top layer with grated cheese, pour over melted butter and place in a hot oven for a few minutes to melt the cheese.

On Monday they start baking pancakes and the first pancake is given to the poor - to commemorate deceased relatives. The daughter-in-law goes to visit her parents, and in the evening both the father-in-law and mother-in-law visit the matchmakers. You can surprise your relatives with a pancake cake, disguising it with sour cream, chocolate or curd cream so that you won’t immediately guess that its basis is traditional pancakes.
