Passing through this pipe, hot air will cool down to the temperature required for cold smoking, approximately 18–25 degrees.   • The length of the pipe from the smoker to the firebox specifically affects what type of smoking you get. Some people make 2 removable systems with their own hands. According to the principle of the designer, they exchange places if you want to cook fish, meat, cold-smoked or hot-smoked vegetables;
  • A firebox removed a few meters from the smokehouse will make it possible to cook food by cold smoking. When smoke enters the pipe, it will be cooled to 20-25 degrees;
  • Place a sheet of metal at the bottom of the smokehouse, wrap it in strong foil. This system will make it possible to collect fat. It is recommended to change the foil after each preparation so that the unusable fat does not spoil the taste of a new batch of sweets;

To make a universal smokehouse, you can install a pipe of the length that you will use at the moment.

An option could be a do-it-yourself smokehouse from a gas cylinder. It can be implemented in several ways. One of the best options is a smokehouse with several compartments that have their own purpose.

What is smoking

Most often, smokehouses are built for a specific type of smoking. It can take place at elevated temperature or chilled smoke. Therefore, it received such a name: cold and hot smoking. In cold smoking, the smoke travels a certain distance through the pipe to cool down before being fed into the main smoking chamber. It should be within 25 degrees Celsius in temperature. For hot smoking, everything is a little simpler. In this case, you can use almost any container, on the bottom of which wood chips are poured and a fire is kindled under it. It is enough to close such a smokehouse well so that the smoke remains inside. The process takes several hours as opposed to several days with cold smoking. But if you decide to assemble a smokehouse from a cylinder, then it will be a universal solution and will be able to please you even with a barbecue.

Required tools and consumables

Some work on the manufacture of such a smokehouse will require work with a welding machine, so you can make sure in advance that a friend or craftsman helps in the construction of the smokehouse if such a unit is not available in the household. In addition, you will need:

  • Bulgarian;
  • chalk for marking;
  • roulette;
  • three pairs of loops;
  • pipe ¾";
  • sheet material 4 mm thick;
  • reinforcement bars with a diameter of 5 mm;
  • drill;
  • hacksaw for metal;
  • three gas bottles.

Due to the fact that the project of the smokehouse is individual for everyone, additional components may be needed, which can be purchased along the way.

Balloon preparation

The balloon itself is an ideal option for making a smokehouse. It is made of durable and high-quality metal with sufficient wall thickness, which will warm up well over the entire surface. Also, you do not have to carry out complex procedures for creating a smokehouse shape. Thanks to the cylindrical inner space, the air in the smokehouse will circulate in the best possible way. First of all, the balloon must be well inspected from all sides. It is important to assess whether there are places affected by rust and how deep it is. After an external assessment, the cylinder should be rid of the remaining propane that was stored in it. All actions are preferably carried out in cool, dry weather. It is advisable to choose an open place next to which there will be no source of sparks and fire.

The valve is unscrewed to the maximum possible size. The hole where the gas comes from is better to turn into the wind. Propane is heavier than air, so it can sink to the bottom, in order to get it from the bottom of the cylinder, it is necessary to turn the cylinder over with an open valve and wait until the substance comes out. You can leave the balloon in the open position for a day. To make sure the bottle is completely empty, you can make soapy water and use a washcloth to apply it to the hole. If bubbling is observed, then the residue is still coming out. Now you can proceed to the basic steps for making a smokehouse from a gas cylinder.

Using a hand saw, it is necessary to cut the valve with a mounting hole for it. It is better not to use the grinder for now in order to comply with all security measures. While working with a hacksaw for metal, it is necessary to lubricate the cut with water from time to time. On the one hand, this will cool the web, and on the other hand, it will minimize the likelihood of sparks. After gaining access to the inside of the cylinder, it must be filled with water to get rid of the smell. This will help the addition of ammonia to the liquid. The settling will take several hours. After that, you can rinse the bottle several times with running water.

Making the main compartment

It makes no sense to bring diagrams and drawings, because everyone will proceed from what is available. Gas cylinders also come in various sizes. In this design, cylinders of 50 and 20 or 30 liters will be used. The door can be made in two ways. One of them involves cutting a smokehouse cylinder into two parts. One of them will serve as a cover. But with this method it is more difficult to keep the temperature at the required level, so it is better to cut it directly into the wall. With the help of a crayon, lines are drawn along which the grinder will cut. The cut is done in several stages to make it as even as possible. Particular attention should be paid to places where the cylinder is bent. It is worth being careful so that the canvas does not bite.

No need to cut the rectangle to the end. If it is dismantled, then it will be more difficult to try it on in its place. Therefore, loops are applied first. Under them, markings are made both on the cylinder and on the door. Small tacks are used to fix the loops on the future smokehouse. After that, the final alignment and welding of all seams is carried out. Once the task is completed, you can easily draw the line of the smokehouse door with the grinder to the end. A handle is attached to the roof of the smokehouse, for which it can be lifted. You will also need to make additional supports for the smokehouse door so that it does not fall inward. To do this, two strips of metal 2 cm wide are welded along the edges of the hole in the smokehouse. They must be bent in the shape of the arc of the cylinder.

Note! Someone prefers not to weld the hinges to the smokehouse, but to fix them on the bolts. In some cases, this solution is actually quite practical, as the hinges are easy to replace. It is important to remember that the bolts should not have a specific coating, because after heating the smokehouse will have harmful emissions.

To strengthen the design of the cylinder, a ¾ inch pipe is welded in the middle along the entire length. It will not allow the walls of the smokehouse to deform at high temperatures. You can also use stainless steel hooks to hang meat to be cooked by hot smoking on it. Additionally, a grate can be built in the middle of the smokehouse. You can make it yourself from rebar or modify those found in old refrigerators.

Firebox manufacturing

For the firebox, you can use half a 50 liter bottle or a 20 liter bottle. It must be taken out separately in order to achieve the effect of smoking, because, otherwise, you get an ordinary grill. In the bottom of the cylinder for 50 liters, a hole is cut out half the height. The same hole is made in the bottom of the smaller cylinder. Following the model of a cylinder for a smokehouse, a door is made through which firewood will be loaded. The holes are aligned with each other and tack welding is performed using a welding machine. After the correct position of the two modules becomes apparent, the seam is applied. From the opposite side, holes are made in the furnace cylinder, which will serve as a blower. They are made adjustable in order to control the intensity of burning, and, accordingly, smoking. Additionally, it is possible to provide fasteners for the grate, where it will be possible to fry the grill.

Advice! If there is no second cylinder available, then the firebox can be built from sheet material. It can be square or rectangular.

Installation of the cold smoking compartment

The main chamber of the smokehouse is designed for hot smoking, because the temperature in it reaches values ​​​​of 80 degrees or more. In order to carry out the process and cold smoking in such a smokehouse, you will need another chamber. For its construction, you will need another balloon. Its preparation is carried out in the same way as the cylinder used for the main chamber of the smokehouse. The door is made the same size so that you can freely place meat for smoking inside. Several rods are fixed across the cylinder, on which the meat will be hung for smoking.

The hole left in the cold smoking chamber after the valve has been cut off will be used as a chimney. You can weld a small pipe to it. It is necessary to make a damper in it so that the smoke lingers inside, and not blown out. A hole is cut from below half the thickness of the cylinder, the same hole is cut in the upper part of the end of the chamber for hot smoking. They are combined in such a way that the cold smoking cylinder is in a vertical position. How it is done is shown in the photo below. A good solution would be to equip the hot and cold smoking chamber with thermometers, which are sold separately for grills.

In order for the design of the smokehouse to be stable, you need to take care of the stand. It is worth remembering that due to the two additional modules, the legs will have to be slightly apart in order for the smokehouse to be stable. You can make legs for a smokehouse from reinforcement rods or a square pipe. If they are supposed to be removable, then they are fixed on bolts and nuts, and not on welding. Their length must be calculated in such a way that the height of the hot smoking chamber is at the level of 1 meter. An additional partition can be made between the legs of the smokehouse, on which a shelf for firewood or other accessories is mounted. If the smokehouse will need to be moved frequently, then it makes sense to install two wheels from a children's bike.

Advice! Do-it-yourself smokehouse can be made from an old gas stove. In this case, the cylinder will serve as a smoke generator. You will need to make a hose supply through which smoke will flow for smoking. To install the grates for smoking, everything is ready, because there are special grooves. Chip harvesting

Along with the construction of the smokehouse, the preparation of wood chips for smoking is an important step in the entire project. If raw materials are harvested from unsuitable wood, then the result will not be the best. That is why the use of coniferous trees is avoided. The reason is the abundance of resins that are contained in wood. When smoking, the resins will evaporate and settle on the smoke paths and on the firebox itself. In addition, they give a bitter aftertaste when smoked, which can spoil the product and nullify all strength. An excellent solution for smoking is dense wood. These include oak, hornbeam, beech, alder. When harvesting, it is worth remembering that the chips should not be too small. It cannot withstand high temperatures and may ignite. A larger one with a size of 3 cm or more smolders beautifully and emits a sufficient amount of smoke for smoking.

Fruit trees, for example, cherry and apple, also showed themselves well when smoking. It is not necessary to cut live branches from them in order to achieve the desired result. It is enough to save the remains after seasonal pruning. To use wood for smoking, it is necessary to remove the bark from it and only then grind it into chips. The bark contains a large amount of resins, which will have an unpleasant effect on the final product. The use of juniper and currant branches in small quantities is encouraged.
